Sausage and Cheese Gumbo

  • Either 1 whole chicken to boil or 1 pre-cooked rotisserie chicken from the grocery store.
  • 1 jar of pre-prepared rue. Douguet’s 1lb
  • 1 bag frozen onions
  • 1 bag frozen green peppers
  • 1 red pepper
  • 1 bag frozen okra
  • 1 pkg Andouille sausage
  • 3-6 celery sticks
  • Garlic
  • Chicken broth with roasted garlic (optional)



Step 1

Saute onions, bell peppers, celery, garlic in a little oil.
Then add the sausage.
Then add the okra.

Add chicken water (or chicken broth w/ garlic if you use the rotisserie chicken) and jar of rue. Fill the rest of pot with chicken broth with garlic in it.

Add a couple cans of chopped stewed tomatoes.

De-bone chicken and add. Bring to boil.

Reduce heat to low and simmer as long as you want.

You can use any quantities that you like of the ingredients.
