Potato-Chorizo Taco with Simple Avacdo Salsa

Ingredients
- TACO:
- 3 med size potato , peeled and cut into 1/2 in cubes
- 12 oz chorizo, remove from casing
- 1 sm onion, finely chopped
- 1 garlic clove, peeled
- SALSA:
- 1 garlic clove
- fresh green chilies
- 1 large avacodo
- 12 warm corn tortillas

Preparation
Step 1
In medium saucepan bring about 1 QT water to boil. Add cubed potatoes and simmer until potatoes are fully tender. Drain and set aside.
In large heavy skillet, combine chorizo, onion and garlic. Stir breaking up chorizo. Cook until onion soft about 10 mins. Pour off excess fat.
Add pototes to chorizo and continue to cook until potatoes are brown. Stirr and mash lightly. mixture will look like hash.

For salsa. Combine garlic, chilies in food processor. pulse until finely chopped. Peel and pit avacodo add to processor until well blended.
