White Bean And Italian Sausage Chili

Ingredients

  • Spice mix:
  • 1 Tbsp vegetable oil
  • 1 lb hot Italian sausage
  • 1 Tbsp olive oil
  • 5 oz pancetta, diced
  • 1 large yellow onion, diced
  • 6 garlic cloves, minced
  • 1 green pepper, diced
  • 2 cups dry cannellini beans, rinsed
  • 1 Tbsp finely chopped oregano
  • 2 tsp red-pepper flakes
  • 2 qts(8 cups)chicken stock
  • Garnish:
  • sour cream
  • 1/2 cup green onions,cut into long strips

Preparation

Step 1

-film a large stock pot w/ vegetable oil and place over moderate high heat
-brown sausage on all sides
-reduce heat to low and cook through(8-10 mins)
-discard grease
-add olive oil and pancetta over low heat until crisp(~7-9 mins)
-add onion and cook until soft(5-6 mins)
-add garlic and saute until golden(~3 mins)
-add remaining ingredients,increase heat and bring to boil
-dice sausage and return to chili
-lower heat and simmer until beans are tender(at least 90 mins)stirring occasionally
-season w/ salt and pepper
-serve w/ dollop of sour cream and green onions
