Spicy lime Scallops

Ingredients

  • 8 large scallops
  • 1 T canola oil
  • 1 T crushed garlic
  • 1 T fresh ginger
  • 1 bunch green onions
  • 1 lime, finely grated lime
  • 1 small red chili, finely chopped
  • 3 T lime juice
  • lime wedges
  • 2 cups Jasmine rice

Preparation

Step 1

1. Heat the oil in a skillet or wok.
2. Add the garlic and ginger and stir-fry for 1 minute without browning.
3. Add the green onion and continue stir-frying over high heat for 4-5 minutes.
4. Stir in the lime rind, chili and lime juice. Cook for an additional 1 minute.
5. Serve over jasmine rice with lime wedges.
