Ingredients
- 4 eggs, beaten
- 1 16 oz can pumpkin puree
- 1/3 cup water
- 1 1/2 teaspoon cinnamon
- 1 8 oz package pitted dates, snipped
- 3 cup sugar
- 1/2 teaspoon vanilla
- 1 teaspoon salt
- 1 cup vegetable oil
- 3 1/2 cup flour
- 1 teaspoon baking soda
- 1 1/2 cups chopped nuts (i use walnuts)

Preparation
Step 1
Preheat oven to 350.
Combine eggs and sugar in a large bowl, stir in pumpkin, oil, water & vanilla. Mix until blended well. Sift dry ingredients together in separate bowl. Add dry mixture to egg mixture stirring until just combined. Add dates & nuts.
Pour into 2 greased 9 x 5 x 3 loaf pans. Bake at 350 for 55 mins or until a toothpick tests clean in center of loafs. Cool on rack 10 mins before removing from pan and slicing. Serve with whipped cream or cream cheese.
