Ingredients

  • 2 cups oat flour
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 8 tbs butter
  • 1 tbs brown sugar
  • Filling
  • 1 pint blueberries
  • 1 tbs cornstarch
  • 1 tbs water
  • 1/2 cup sugar
  • 1 tbs lemon juice
  • 1 tbs lemon zest
  • Crumble
  • 4 tbs oat flour
  • 3 tbs brown sugar
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 4 tbs butter
  • 1 cup whole oats

Preparation

Step 1

1.Preheat oven to 350 degrees. Line an 8x8 pan with parchment paper. Combine crust and press into 8x8 pan and bake for 5 minutes. Remove from oven and allow to cool.
2.Warm blueberries in a medium pan with lemon juice, zest, cornstarch and water for 1-2 minutes until thickened. Place warm blueberries on top of partially baked crust.
3.Combine topping in a small bowl, mixing with hands until it sticks together. Sprinkle this mixture over the blueberries. Return pan to oven and bake for 40-45 minutes.
4.Let cool completely before cutting and serving.
