Zucchini Carrot Apple Bread

I got this recipe in the costco magazine. I changed it by using wheat flour instead of white, unsweetened applesauce instead of sugar, and the egg product in a carton instead of eggs. It was great!

Ingredients

  • Remember this makes two loaves, so you can cut in half unless you want to freeze one or give one away.
  • 2 c sugar (use unsweetened applesauce)
  • 1 c unsalted butter, melted
  • 3 eggs (use the egg product in a carton)
  • 1/4 c fresh orange juice (I used Sunny D)
  • 2 1/2 t vanilla extract
  • 3 1/4 c all purpose flour (use wheat flour)
  • 1/2 t salt
  • 2 1/2 t baking powder
  • 3/4 t baking soda
  • 2 1/2 t cinnamon
  • pinch of cloves
  • 2 c shredded carrots
  • 1 c shredded zucchini, unpeeled
  • 1/2 c plump golden raisins
  • 1 c finely diced, peeled apples
  • 1/2 c walnuts, chopped (optional)

Preparation

Step 1

Preheat oven to 350. Grease 2 loaf pans or one bundt pan. You can also make 24 muffins.

In a mixer bowl, blend the sugar, butter, eggs, orange juice and vanilla.

In a medium bowl, stir together the flour, salt, baking powder, baking soda, cinnamon and cloves. Fold the dry ingredients into the wet batter along with the shredded carrots, shredded zucchini, raisins, apples and walnuts. Spoon into pans.

Bake until done, about 1 hour or until loaves spring back when touched.
