Ingredients

  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 cup raisins
  • 1 cup dried cranberries
  • 2-1/2 cup flour
  • 1 teaspoon sea salt
  • 2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1/2 cup soft butter
  • 1/2 cup butter Crisco
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 2 cups rolled oatmeal (not quick cook or instant)
  • Optional: 1 cup chopped nuts

Step 1

Preheat oven to 350°F.

In large mixing bowl, beat 3 eggs and add vanilla extract. Add raisins and cranberries and mix all together. Let sit one full hour.

In large bowl mix thoroughly and set aside: flour, sea salt, baking soda, cinnamon, nutmeg and cloves.

In another bowl, beat butter, Crisco, sugar and brown sugar until creamy. Add flour mixture to creamy butter mixture till incorporated.

Now stir in egg and raisin mixture till blended.

Add 2 cups of rolled oatmeal (do not use quick cook), then add nuts if using.

Mix all together till mixed well.

On lined sheets with parchment paper, shape dough into 1-1/2" ball at least 2" apart.

Bake 12-15 minutes or till browned (they will be puffy but will fall when cooled).

Cool on pan about 2-3 minutes before moving to cooling racks.
