Ingredients

  • 2 tablespopons margarine
  • 3 tablespoons All-Purpose Flour
  • 2 cups of milk
  • 3 cups diced cooked potatoes
  • 2 tablespoons of chopped parsley
  • 2 tablespoons of chopped pimento
  • 1/2 teaspoon salt
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup of buttered bread crumbs
  • 1/4 teaspoon paprika

Preparation

Step 1

Melt margarine in heavy saucepan over low heat, gradually add flour. Cook until bubbly, stirring constantly. Gradually add milk; cook stirring constantly until thickened. Stir in potatoes, parsley, pimento and salt. Spoon into a 1 ½ or 2 quart casserole. Combine cheese, breadcrumbs and paprika; sprinkle over potato mixture. Bake at 400 for 20 minutes.
