boneless skinless chicken breast
cup seasoned bread crumbs
pkg frozen spinach
oz crumbled bleu cheese
slices cooked crumbled bacon pieces
small onion, finely chopped
Place chicken inside a 1 gallon freezer bag. Pound to 1/4 inch thickness. Prepare the stuffing as follows: Mix spinach, bleu cheese, bacon and onion together in a bowl. Prepare an egg wash using 2 eggs and 2 tbsp of water. Stuff the chicken with the spinach mix. Secure it with toothpicks or twine. Dip it into the egg mixture and then roll in bread crumbs. Place chicken in skillet with a small amount of oil and brown on all sides. Place in a casserole dish and bake at 350 degrees for 45 minutes. Serve with a Bearnaise sauce or white wine sauce.
