Apricot-Pineapple Glazed Shrimp

  • 1 C. apricot preserves
  • 1/4 C. finely chopped dried apricots
  • 2 Tbsp. finely chopped onion
  • 1 Tbsp. rice vinegar
  • 1 Tbsp. dijon mustard
  • 1 garlic clove, halved
  • 1/4 Tsp. salt
  • 28 uncooked shrimp, peeled and deveined
  • 2 C. fresh pineapple cubed (about 14 pieces)

Step 1

Place first seven ingredients in food processor. Process until blended. Set aside half of sauce for serving. On each of 14 metal skewers, thread shrimp, and pineapple. Grill over medium heat for 3-4 minutes on each side or until shrimp turn pink. Bast with remaining sauce.
