Baked fish with garlic and toatoes

Ingredients
- 4 even sized fish or fillets about 1" thick - cod, etc
- 3 tbsp olive oil
- 3 tbsp dry white wine or sherry
- 1 lemon
- 2 cloves garlic crushed
- Salt and Pepper
- 12 oz. fresh tomatoes thinly sliced or 14 oz canned tomatoes strained
- Sprigs of fresh dill for garnish

Preparation
Step 1
1.Preheat oven to 375F
2. Trim the fns and neaten the tail if using whole fish.
3. Place fish in ovenproof dish - head to tail. Mix the oil and wine together and squeeze the juice from the lemon into it. Add garlic. S & P and pour over the fish. Place tomatoe slices across top of fish
4. Bake for about 25 minutes, basting frequently until fish is tender.
5. Garnish with dill (or parsley) and serve
