Fettucine & Tomatoes with Rosemary Basil Cream Sauce

In a large pot, bring 4 quarts of water to boil
- 1/2 stick butter
- 2 teaspoons chopped fresh basil
- 1 teaspoon crumbled fresh rosemary
- 1 teaspoon shredded fresh sage
- 1/2 cube chicken buillon
- 2 pounds tomatoes, seeded and diced
- 1/2 cup heavy cream
- 1 pound fettucine
Quick Ham Potato Soup

Spray a small skillet with cooking oil
- cooking oil spray
- 1/2 cup diced ham
- 1 cup frozen hash brown potatoes
- 1/2 teaspoon dried oregano
- 1/2 cup plus 1 cup milk
- 1/2 cup chopped green onions
Indian Style Zucchini Mushroom Saute

Using a wok or large saute pan, heat the oil on high, but do not allow it to smoke
- 1 medium yellow onion, chopped
- 2 Tablespoons peanut or olive oil
- 1 teaspoon coriander
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon chili powder
- 3 cups sliced mushrooms ( small box )
- 2 medium zucchini, thinly sliced
- 1/2 cup cilantro, minced
- 3 Tablespoons cream ( optional )
Confetti Rice

- 1 cup white rice
- 1 cup chopped dried fruit pieces
- ( such as apricots )

Chinese Eggplants with Black Bean Sauce

Combine the chicken broth, oyster sauce, sugar, sea salt, and cornstarch, and set aside
- 1/4 cup chicken broth
- 1 Tablespoon oyster sauce
- 1/2 teaspoon sugar
- 1/2 teaspoon sea salt
- 1 teaspoon sifted cornstarch
- 1/2 cup peanut oil
- 2 ( 3/4 pound ) Chinese eggplants,
- cut in half lengthwise in 8 pieces and then cut in half cross-wise
- 2 large cloves minced garlic
- 1 Tablespoon minced ginger
- 1 can black beans, drained but not rinsed, and finely chopped
- 1 teaspoon cayenne pepper
- 2 Tablespoons diced pimentos
- 2 green onions, cut into 1 inch pieces
Moo Shu Burger Wraps

- 8 ( 8 inch ) flour tortillas
- 1/2 cup chopped red or green onion/s
- 12 ounces lean hamburger
- 2 cups slaw mix
- 1 cup corn
- 1/4 cup hoisin sauce

- 1 peeled & sectioned orange, chopped
- 1 cup halved red seedless grapes
- 1/2 cup thinly sliced celery
- 1 small finely chopped peeled & cored apple

- 1/4 cup sunflower kernels
Slow Cooker Artichoke Cheese Dip

Mix all ingredients together in a large crock-pot
- 1 cup artichoke hearts, drained and chopped
- 1 red bell pepper,
- seeded and finely chopped
- ( or equivalent roasted red pepper )
- 2 cloves minced garlic
- 1 cup mayonnaise
- 16 ounces shredded mozarella cheese
- 1 cup grated Parmesan cheese
- crackers or pita bread for dipping
Curried Carrot and Potato Soup

Saute the onion and garlic at medium heat until the onion is soft
- 1 Tablespoon olive oil
- 1 mediums sized chopped white onion
- 1 inch piece of fresh ginger, peeled and minced
- 6 medium peeled carrots, cut into 1 inch chunks
- 2 medium sized chopped potatoes
- 3 cups chicken broth
- 4 squares Japanese curry paste, or
- 2 teaspoons hot curry powder
- 1 teaspoon coriander
- 3/4 cup plain yogurt
- 4 thin lemon slices
- 2 Tablespoons chopped green onion
