Orange and Avocado Salad

Slice the avocado and sprinkle the lemon juice over it
- 1 avocado
- 1 orange
- 1 Tablespoon lemon juice
- 1/3 cup Miracle Whip salad dressing
- 2 Tablespoons orange juice
- Boston lettuce
Sweet Potato Kale Cannellini Soup

Saute the onion and garlic cloves in the olive oil, add the kale, and stir until kale is wilted
- 2 Tablespoons olive oil
- 1 large chopped white onion
- 4 cloves minced garlic
- 1 bunch of kale, chopped into strips
- 3 teaspoons Italian seasoning,
- or 1 teaspoon each oregano, thyme,
- and basil
- 3 cans vegetable or chicken broth
- 2 ( 15 ounce ) cans cannellini beans,
- rinsed and drained
- 1 pound of sweet potato, peeled and cubed
- salt and pepper to taste
Fancy Black Baked Beans

Preheat oven to 300 degrees
- 2 cups dried black beans,
- rinsed and drained
- 4 cups chicken stock
- 4 cups cold water
- 1/2 pound diced bacon
- 1 large diced onion
- 2 diced carrots
- 2 diced celery ribs
- 4 cloves chopped garlic
- 1 Tablespoon chili powder
- 1 Tablespoon cumin
- 2 teaspoons salt
- 12 ( 6 inch ) corn tortillas
- 1/4 pound crumbled feta cheese
- 1/4 cup chopped pickled jalapenos
Tex-Mex Rice

Brown the burger and drain off grease
- 1 pound lean ground beef or chuck
- 16 ounce jar of medium or hot salsa
- 1 package frozen corn
- or 1 can of corn, drained
- 1 1/2 cups water
- 2 teaspoons chili powder
- 1 1/2 cups white medium-grain rice,
- rinsed several times and drained
- 4 ounces ( about 1 cup)
- shredded Monterey Jack cheese
Hungarian Mushroom Potato Soup

Melt the butter at medium-high, then saute the onion until transparent
- 2 Tablespoons butter
- 1 medium chopped yellow onion
- 1 pound sliced mushrooms
- 1 teaspoon paprika
- 2 Tablespoons flour
- 2 medium peeled and diced potatoes
- 2 ( 15 ounce ) cans of broth
- ( chicken or beef )
- 2 teaspoons dill
- 2 bay leaves
- 1/4 cup sherry
- 1/2 cup sour cream ( optional )

- 2 ( 4ounce ) boxes lemon
- instant pie & pudding mix
- 3 1/2 cups cold milk

- 1/4 cup softened butter
- 1/2 cup sugar
- 1 cup flour
- 2 teaspoons baking powder
- 1/8 teaspoon salt
- 1/3 cup milk
- 1 1/2 cup berries
- 1/2 cup sugar
- 1/2 teaspoon cinnamon
- 1/2 cup orange juice

- 1/2 pound pork sausage
- 1 beaten egg
- 1 cup fresh breadcrumbs
