Slow Cooker Apples & Pork

Place pork in slow-cooker
- 1 1/2 pounds pork loin cut into 6 pieces
- or 6 boneless pork chops
- 3 Tablespoons brown sugar
- 1 Tablespoon cinnamon
- 1/2 teaspoon salt
- 4 medium peeled and sliced Golden Delicious apples
Herb Stuffed Sole

- 1/2 cup crumbly style stuffing mix
- 1/4 cup fresh chopped parsley
- 2 Tablespoons melted butter
- 1 teaspoon lemon peel
- 1 pound sole filets
- 1/4 cup melted butter
- 1 Tablespoon lemon juice
Molasses Black Pepper Crusted Pork Tenderloin

- 3-4 pound package pork tenderloin
- 3 Tablespoons molasses
- 3/4 teaspoon balsamic vinegar
- 1/2 teaspoon worcestershire sauce
- 1 clove garlic, minced

- and hand-ground black peppercorns
Applesauce Bran Muffins

- 1/3 cup brown sugar
- 1/2 stick melted butter
- 2/3 cup applesauce
- 2 lightly beaten eggs
- 1/3 cup half-and-half
- 1 cup flour
- 1 cup unprocessed wheat bran
- 1 Tablespoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/8 teaspoon ginger
- 1 cup raisins
- optional : 1/2 cup minced walnuts
Goat Cheese Cream Cheese Pecan Pears

- 2 Tablespoons pecan pieces
- 2 Tablespoons goat cheese, at room temperature
- 1/4 cup softened cream cheese

Roast Pork and Sweet Potatoes with Gingersnaps

- 4 finely crushed gingersnaps
- 5 pound pork loin end roast
- 6 medium sweet potatoes
Asian Slaw

Combine, cover, and chill, at least one hour
- 2 Tablespoons rice wine vinegar
- 1/2 teaspoon ground ginger
- 1/4 teaspoon sugar
- 2 1/2 cups shredded or thinly sliced Napa cabbage
- 1/2 cup grated peeled carrot
- 1/4 cup diced scallions
- 1/4 cup diced red bell pepper
- 2 Tablespoons chopped cilantro
Crock-Pot Chicken Thighs in Enchilada Sauce

Combine the first 6 ingredients in crock-pot
- 1 ( 14 ounce ) can diced tomatoes with chipoltle chiles
- 1 ( 10 ounce ) can enchilada sauce
- 1 cup frozen or canned corn
- 1/2 teaspoon cumin
- 1/4 teaspoon black pepper
- 1 1/2 pounds boneless skinless chicken thighs
- ( cut into bite-size pieces )
- 3 Tablespoons chopped cilantro
- 1/2 cup ( 2 ounces ) shredded pepper-jack cheese
- garnish : chopped green onions
- cooked rice
- re-fried beans, if desired
Moroccan Crock Pot Vegetables

Combine all ingredients in crock pot
- 2 large peeled sweet potatoes, cut into round chunks
- 1 pound peeled and chopped or sliced carrots
- 1 pound peeled and diced turnips
- 2 medium sized yellow onions, chopped
- 6 dried apricots, chopped
- 2 Tablespoons chopped fresh cilantro
- 1 teaspoon each of turmeric and cumin
- 1/2 teaspoon of ginger and cinnamon
- 1/4 teaspoon cayenne pepper
- 14 ounce can vegetable or chicken broth
