  • pounds grated sharp or extra sharp cheddar cheese

    ounces soft cream cheese

  • ¾

    cup mayonnaise

  • 1

    Tablespoon grated or very finely minced white onion

  • 1

    teaspoon cayenne ( or more, to taste )

  • 1

    ( 7 ounce ) jar chopped pimentos, drained


Mix together the cheddar cheese, cream cheese, mayonnaise, onion, and cayenne pepper mix well, but not smooth. Add the pimentos and mix somewhat smooth. Pack into a crock or bowl and cover tightly with plastic wrap. Chill in frig overnight to allow flavors to blend. Remove from frig about 45 minutes before serving to bring to room temperature.
