Banana Muffins

Really really good !!
- 1 cup sugar
- 2 lightly beaten eggs
- 1/2 cup soft butter
- 2 cups flour
- 2 teaspoons baking soda
- 3 mashed bananas
- using 4 bananas increases the yield
- to 16 muffins
Green Tomato Bread

- 3 eggs
- 1 cup vegetable oil
- 2 cups sugar
- 2 teaspoons vanilla
- 2 cups finely-chopped green tomatoes
- 1 cup well-drained crushed pineapple
- 3 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup chopped nuts
- 1/2 cup golden raisins
- 2 Tablespoons sesame seeds
Lime Mint Cole Slaw

Combine mint and sugar; using a spoon, crush the mint leaves against the sides of the bowl
- 1 1/2 cups shredded Napa
- or Savoy cabbage
- 1 1/2 cups shredded green cabbage
- 1/2 cup unpeeled cubed cucumber pieces
- 1/4 cup sliced green onions
- 2 Tablespoons fresh mint leaves
- 1/2 teaspoon sugar
- 4 Tablespoons lime juice
- 1/2 cup whipping cream
Mexican Cinnamon Rice

Saute onion, and then garlic, in the butter, stirring until onion is tender
- 1/2 cup ( 1 medium-sized ) chopped yellow onion
- 1 clove minced garlic
- 2 Tablespoons butter
- 1 cup long-grain white rice, well rinsed
- 1/4 cup dried currants
- 2 1/4 cups chicken broth
- 2 teaspoons cinnamon

- 1/2 onion, chopped
- 2 cans cream of chicken soup
- 1 can cream of mushroom soup
- 8 ounce container French Onion dip
- 2 cans chicken broth

- 1/2 stick butter
- 1/2 bag baby carrots, par-boiled
- 1 bag roasted garlic potatoes

- 1/4 cup chopped green pepper
