Cranberry Orange Honey Muffins

Preheat oven to 400 degrees
- 1/3 cup soft butter
- 1/3 cup honey
- 1 well-beaten egg
- 1 can whole-berry cranberry sauce
- zest of 1 orange
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon salt
Cantaloupe Chiffon Pie

I used frozen cantaloupe balls to make the puree, which worked out fine
- 1 cup pureed cantaloupe
- plus 1/2 cup cantaloupe in small cubes
- 1 envelope unflavored gelatin
- 3 eggs, separated, yolks slightly beaten
- 3/4 cup sugar, divided : 1/4 cup plus 1/2 cup
- 1/2 teaspoon salt
- 1/2 cup heavy whipping cream
- 9 inch baked graham-cracker pie crust
Wine and Cheese Chowder

Fry the bacon until crisp, drain on paper towels, and set aside
- 3 slices bacon
- 2 finely chopped yellow onions
- 2 minced garlic cloves
- 1/3 cup flour
- 3 peeled and cubed potatoes
- 3 cups chicken stock

- 1/4 teaspoon white pepper

Pork, Sweet Potato, and Kale Soup

Brown the onion and then the pork cubes in oil
- 3 pounds lean pork cut into bite-size cubes
- 1 chopped medium yellow onion
- canola or olive oil
- 2 teaspoons chili powder
- 2 teaspoons cumin
- 1 teaspoon coriander
- 1 teaspoon oregano
- 1/2 teaspoon dry mustard
- 1/2 teaspoon sea salt
- 1/2 teaspoon pepper
- 2 pounds peeled cubed sweet potatoes
- 1 15 ounce can diced tomatoes1 cup chicken broth
- 3 Tablespoons molasses
- 3 Tablespoons cider vinegar
- 3 Tablespoons flour
- 4 cups chopped stemmed kale
Fruit Butter Quick Bread

A vintage recipe that adapts to various types of fruit butter and nuts, such as apple butter and walnuts
- Cantaloupe Butter :
- 2 cups cantaloupe pulp
- approximately 1/4 cup of water
- 1 cup sugar
- 2 Tablespoons lemon juice
- 1 teaspoon cinnamon
- Quick Bread Topping :
- 1/4 cup brown sugar
- 14 cup finely chopped pecans
- 1/2 teaspoon cinnamon

- 1 cup fruit butter
- 1/3 cup vegetable oil

Apple German-Chocolate Cake

- 21 oz can apple pie filling
- 18 oz German-chocolate cake mix
- 3 eggs
- 3/4 cup chopped walnuts
- 1/2 cup miniature chocolate-chips
- can of whipped-chocolate frosting
Asian Clams Linguine

This is an original recipe
- 2 cans chopped clams, 1/4 cup of liquid reserved
- 1/4 cup soy sauce
- 2 Tablespoons rice vinegar
- 2 teaspoons sesame oil
- 1 teaspoon sugar
- 1/4 cup boiling water
- 1/4 cup cornstarch
- 2 Tablespoon olive oil
- 1 Tablespoon minced fresh ginger
- 1 clove minced garlic
- 1 1/2 teaspoons red pepper flakes
- cooked linguine to serve 2-4 people
Peach Salsa

Excellent as a side with black-pepper crusted pork tenderloin
- 2 peaches, cut in 1/2 inch pieces
- 1/2 of a small red onion, finely minced
- 1/4 cup finely chopped mint
- 3 Tablespoons lime juice
- 1/4 teaspoon salt
