Sweet Spicy Crockpot Pork Tacos

Ingredients
- 3 pound Boston Butt pork roast
- 2 ten-ounce cans diced tomato
- 2 chopped ancho chile peppers in adobo sauce
- 2 Tablespoons cider vinegar
- 2 Tablespoons dark brown sugar
- 1/4 teaspoon cumin
- cooked rice
- black beans
- flour tortillas
- lime wedges
- cilantro

Preparation
Step 1
Sprinkle pork roast with 1/2 teaspoon each of salt and black pepper. Brown all sides of the roast in hot oil for 2-3 minutes at medium heat. Combine in the crockpot : tomatoes, chiles in sauce, cider vinegar, dark brown sugar, and cumin. Add the roast. Cook on low for 10 hours. Let Stand 10 minutes and shred. Serve with flour tortillas, rice, black beans, lime wedges, and cilantro.
