Amaretto Fudge

Combine chocolate chips and milk in a microwavable bowl and cover loosely
- 12 oz package chocolate chips
- 14 oz can sweetened condensed milk
- 1/4 cup Amaretto
- 1 teaspoon almond extract
- 3/4 oz sliced almonds
Ribs Marinade

Combine all ingredients. Pour over ribs and chill in frig for 2-3 hours
- 1 finely chopped garlic clove
- 1/2 cup chopped red onion
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 2 teaspoons dry mustard
- 1/2 cup ketchup
- 1/2 cup chili sauce
- 1/2 cup cider vinegar
- 1 Tablespoon worcestershire sauce
- 2 Tablespoons lemon juice
Crockpot German-Style Potato Soup

Spray crockpot lightly with canola oil
- 4 medium peeled and chopped potatoes
- 2 stalks sliced celery
- 1 medium chopped white or yellow onion
- 8 ounces sliced smoked sausage
- 1 can beef broth
- 2 Tablespoons cider vinegar
- 1 Tablespoon sugar
- 1/4 teaspoon pepper
- 1/4 teaspoon celery seed
- 1/2 teaspoon dry mustard
- 2 cups chopped cabbage
- 3 Tabslepoons chopped parsley
Andouille Sausage in Red wine and Paprika

Brown the sausage slices on both sides at medium-high heat, about 3 minutes per side
- 2 Tablespoons olive oil
- 1 pound Andouille sausage cut into 1/2" rounds
- 1 Tablespoon chopped oregano
- 2 teaspoons mined garlic
- 1 teaspoon smoked paprika
- 1/2 cup red wine
Candied Fruit Peel

Cut oranges in half. Scrape out pulp and membranes, leaving white skin on peel
- 6 oranges with near perfect skins
- 3 1/4 cups sugar
- 2 teaspoons ground ginger
Gingersnap Baked Pears

- 16 oz can pear halves, drained
- 12 finely crushed gingersnaps
- 2 Tablespoons sugar
- 2 Tablespoons melted butter
Cucumber, Mango, and Black Bean Salad

This is a low-carb Atkins recipe
- 1 cucumber, cut into 1/2 inch slices,
- seeded, and diced
- 1 medium sized mango,
- cut into 1/4 inch diced pieces
- 1 can black beans, drained,
- and rinsed well in a colander
- 4 Tablespoons lime juice
- 4 Tablespoons orange juice
- 1 seeded and minced jalapeno
- 3 Tablespoons minced cilantro
- 1/2 teaspoon fine sea salt
Marmalade Pears

- 16 oz can sliced pears, drained
- 2 1/2 Tablespoons marmalade
- 2 Tablespoons orange juice
