Uptown Tuna Salad

Combine all ingredients and chill for at least an hour
- 2 cans chunk white tuna in water, drained
- 1 1/2 medium-sized diced yellow onions
- 2 thinly sliced celery ribs
- 1/4 cup chopped fresh dill
- 1/2 cup chopped parsley
- 1/8 cup halved capers
- 1/2 cup mayonnaise
- 1-2 Tablespoons milk ( or cream )
- salt & pepper to taste
Black Bean Salsa

A fine companion for grilled pork tenderloin or chicken
- 1/2 cup lime vinaigrette
- ( such as Newman's Own )
- 1/2 teaspoon cumin
- 15 ounce can black beans,
- drained & rinsed
- 1/2 red bell pepper, finely chopped
- 1/8 teaspoon each salt & black pepper

- 1 bunch kale leaves, stemmed and chopped
- 2 Tablespoons olive oil
- 2 cloves of garlic, crushed
- 1 large quartered and thinly sliced
- white onion
- 1/2 medium-sized red pepper thinly sliced
- 1/4 to 1/2 cup chicken broth
- 1 Tablespoon vinegar,
- preferably white wine vinegar
- a hefty dash of Tabasco sauce
Sailboat Salad

- a clear-glass pie plate
- 1 ( 3 ounce ) package berry-blue Jello
- 2 canned peach halves
- 1 thin slice of American cheese
- 2 toothpicks
- Bibb lettuce
Roasted Pepper, Corn & Bean Salad

Combine vegetables. Make dressing and pour over vegetables
- Dressing :
- 15 ounce jar roasted red peppers,
- drained and chopped
- 2 ( 15 ounce ) cans of beans,
- kidney, black, and-or garbanzo
- 1 cup frozen corn, thawed
- 4 ounce can green chiles,
- drained and diced
- 2 thinly sliced green onions
- 2 Tablespoons cider or white vinegar
- 2 Tablespoons lemon juice
- 1 teaspoon grated lemon zest
- 1 clove minced garlic
- 1/2 teaspoon cumin
Sauerkraut Applesauce Sausage Beer Casserole

Baked Blackberry Custard

- 3/4 cup milk
- 3 eggs
- 1/2 cup + 1 Tablespoon sugar
- 1/2 cup flour
- 1/4 teaspoon sea salt
- 1/2 teaspoon vanilla
- 4 Tablespoons melted butter
- 2 cups berries
Italian Crock Pot Roast Beef Sandwiches

Place the roast in the crockpot
- 3-4 pound beef chuck roast
- 1 medium white onion,minced
- 12 ounce jar of pepperoncinis, stem ends removed
- 14 ounce can beef broth
- 12 ounces of beer
- 2 Tablespoons of Italian dressing
- French bread
- Provolone cheese, sliced or shredded
Northern Baked Beans

Pre-soak the beans in the water overnight, drain, rinse, and add fresh water to cover
- 4 cups dried navy beans
- 10 cups water
- a package of sliced salt-pork
- 2 minced white onions
- 1/2 cup tomato paste
- 1/2 cup maple syrup
- 1/2 cup brown sugar
- 1/3 cup molasses
- 1 Tablespoon dry mustard
Porter Wagner's Chocolate Fudge

- 2 Tablespoons cocoa

- 2 Tablespoons butter
- 1 teaspoon vanilla
- 2 Tablesppons peanut butter
- 1/2 cup chopped walnuts
