  • 3 pounds baby red-skinned potatoes, unpeeled and halved
  • 2-3 T. olive oil
  • 2/3 cup freshly grated parmesan
  • 1/2 cup melted butter
  • salt and freshly ground pepper


Servings 8


Step 1

Toss potatoes in olive oil and roast at 400 until tender - about 30-40 minutes. Take out of oven and smash, drizzle butter and season with salt, pepper and parmesan.
