Tomato, Cucumber, Avocado Salad

Chop tomatoes into a medium dice
- 1 1/2 cups of chopped tomatoes--I used cherry tomatoes
- 1 cucumber--peeled and seeded then diced
- 1 avocado--diced
- 4 oz. feta cheese--cubed
- 2 tbsp minced red onion
- 1 handful parsley--minced, about 2 Tbsp
- 2 Tbsp olive oil
- 1 Tbsp red wine vinegar
- 8 twists of black pepper from a pepper mill
Oven Baked Swiss Steak

Cut meat in 4 portions. Mix flour and salt; pound into meat
- 1 1/2 lbs. beef round steak 3/4-inch thick
- 1/4 cup flour
- 1 tsp salt
- 1 (16-0z) can stewed tomatoes
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- 1/2 cup chopped carrots
- 1/2 tsp worcestershire sauce
Pot Roast for Two

Place steaks in an ungreased 2 1/2 quart baking dish
- 2 beef eye of round steaks
- 2 small carrots, cut into 3/4 inch chunks
- 2 small potatoes, peeled and cut into 1/2 inch slices
- 1 celery rib, coarsely chopped
- 1 small onion, sliced
- 1 can (14 1/2 oz) diced tomatoes, undrained
- 1/4 cup beef broth
- 2 garlic cloves,thinly sliced
- 2 tsp onion soup mix
- 1 tsp salt
- 1/2 tsp Italian seasonings
- 1/4 tsp pepper
- 1/8 tsp aniseed
- 1/8 tsp each ground cinnamon, ginger and nutmeg
- Dash ground cloves

- 4 pounds sweet potatoes, peeled and cut into 1/2-inch cubes (about 10 cups)
- 1/4 cup butter or margarine
- 1/3 cup sour cream
- 1/4 cup milk
- 1/2 tsp salt
- 1/2 tsp freshly ground black pepper
- Butter or margarine (optional)
Baked Ham with Cherry Sauce

Preheat oven to 325 degrees
- 1 1 to 8 cooked bone-in ham (6 to 8 lbs.)
- 1 1 1 cup packed brown sugar
- 3 3 3 TBS maple syrup
- 1 1 1 tsp. ground mustard
- 3 3 3 TBS cornstarch
- 1/2 1/2 1/2 cup sugar
- 1 1 1 cup cold water
- 1 1 1 can (15 oz.) pitted dark sweet cherries, undrained
- 2 2 2 TBS lemon juice
- 1 1 1 tsp almond extract
Scrambled Egg Casserole

In a medium saucepan, melt 2 tbs
- 1/2 butter, divided
- 2 tbs. flour
- 1/2 tsp salt
- 1/8 tsp pepper
- 2 cups milk
- 1 cup (4 oz) Velveets
- 1 cup cubed fully cooked ham
- 1/4 cup sliced green onions
- 12 eggs, beaten
- 1 4-oz can mushrooms
- 1 1/2 cups soft bread crumbs
- Additional sliced green onions, optional
Crab Rockefeller

- 4 tbs of butter, divided
- 2 tbs flour
- 1 1/3 cups milk
- 1/2 cup grated Parmesan cheese
- 1 pkg (10 oz) frozen chopped spinach, thawed and squeezed dry
- 1 can (6 oz) crabmeat, drained, flaked and cartilage removed
- 1/2 cup dry bread crumbs
Red, White, & Blueberry Angel Fluff

Cut the angel food cake into small cubes and place into a large bowl
- 1 10-oz Bakery Ready Angel Food Cake, cut into 1 inch cubes
- 1 cup powdered sugar
- 1 8 ounce container cream cheese, softened
- 1 16 ounce container whipped topping, separated
