Fast and easy; low fat
- 1 TBS vegetable oil
- 4 skinless, boneless chicken breast halves
- 1 10 oz can diced tomatoes with green chile peppers
- 1 8.5 oz can whole kernel corn, drained
- 1 pinch ground cumin

Heat oil in a large skillet over medium high heat
- 1 TBS vegetable oil
- 4 skinless boneless chicken breast halves
- 1 10 oz can diced tomatoes with green chili peppers
- 1 15oz can black beans rinsed and drained
- 1 8.75 ounces whole kernel corn drained
Stabilized whipped cream

In a mixing bowl, beat the cream cheese with the powered sugar and vanilla until soft and creamy
- 4 oz cream cheese softed for at least an hour at room temperature
- 1/3 cup powdered sugar
- 1 1/2 tsp vanilla extract
- 1 cup heavy whipping cream
Blueberry Sauce

Combine the blueberries, water, sugar, lemon juice and water in a small-sized saucepan over medium-high heat
- 2 cups frozen or fresh blueberries
- 1/3 cup water
- 1/4 cup sugar
- 2 tbs lemon juice or orange juice
- 1 1/2 tbs cornstarch mixed with 2 tbs water

In a saucepan, melt 2 TBS butter
- 2 TBS plus 1 tsp. butter, divided
- 3 TBS all-purpose flour
- 1/2 tsp salt
- 1/8 tsp paprika
- 1/2 cup half-and-half cream
- 1/2 cup milk
- 1/4 cup white wine or chicken broth
- 1 can (6 oz.) crabmeat, drained, flaked and cartilage removed or 2/3 chopped imitation crabmeat
- 1 can ( 4 oz.) mushroom stems and pieces, drained and chopped
- 1 1/2 tsp minced chives
- 1/2 cup .shredded cheddar cheese
- 1 TBS dry bread crumbs
- Assorted crackers and fresh vegetables
Chipped Beef Cheese Ball

This is an appetizer appropriate for almost any occasion
- 5 pkg (2 oz, each)thinly sliced dried beef
- 12 oz. cream cheese, softened
- 1/3 cup finely chopped sweet onion
- 4 drops worcestershire sauce
- Ritz crackers and assorted fresh vegetables

- 1 box spice cake mix
- 1/2 cup water
- 1/3 cup vegetable oil
- 1 cup canned pumpkin
- 4 eggs
- 2 tsp cinnamon
