BROCCOLI CASSEROLE

Mix all ingredients in a casserole dish
- 10 oz. frozen broccoli
- 1 cup minute rice
- 1 cup milk
- 1 tsp salt
- 1 can cream of mushroom soup
- 3 inches Velveeta cheese
- 1/2 stick margarine
- 1 onion
- 1 can mushrooms (optional)
Polynesian Roast Beef

Cut roast in half; brush with browning sauce if desired
- 1 boneless beef top round roast (3 1/4 pounds)
- 2 tbs browning sauce, optional
- 1/4 cup flour
- 1 tsp salt
- 1/4 tsp pepper
- 1 medium onion, sliced
- 1 can (8 oz.) unsweetened sliced pineapple
- 1/4 cup brown sugar
- 2 tbs cornstarch
- 1/4 tsp ground ginger
- 1/2 cup beef broth
- 1/4 cup soy sauce
- 1/2 tsp minced garlic
- 1 medium green pepper, sliced
Hot Cheesy Spinach Dip

Preheat oven to 425 degrees
- 2 tbs butter
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 tbs flour
- 1 3/4 cups half-and-half
- 2 pkg. (9 oz each) frozen spinach, thawed, well drained
- 1 8-oz can chestnuts, drained
- 1 cup shredded cheddar cheese
- 1 pkg dry vegetable soup mix
- 1/4 cup shredded Parmesan cheese
Deluxe Chocolate Marshmallow Bars

- 3/4 cup butter
- 1 1/2 cup sugar
- 3 eggs
- 1 tsp vanilla
- 1 1/3 flour
- 3 tbs cocoa
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 c chopped nuts (optional)
- 4 cups miniature marshmallows
- 1 1/3 cup chocolate chips
- 1 cup peanut butter
- 3 tbs butter

CHICKEN POT PIE

Mix frozen vegetables, soup, and chicken breast
- 1 1/2 cup frozen vegetables
- 1 can cream of chicken soup
- 1 chicken breast, cut into cubes
- 1 cup Bisquick
- 1/2 cup milk
- 1 egg
Crisp Cucumber Salsa

1/4 cup of this only has 16 calories
- 2 cups finely chopped, seeded, peeled cucumber
- 1/2 cup finally chopped seeded tomato
- 1/4 cup chopped red onion
- 2 tbs. minced fresh parsley
- 1 jalepeno pepper, seeded and chopped
- 4 1/2 tsp minced fresh cilantro
- 1 garlic clove, minced or pressed
- 1/4 cup reduced-fat sour cream (I would use Greek yogurt instead of sour cream)
- 1 1/2 tsp lemon juice
- 1 1/2 tsp lime juice
- 1/4 tsp ground cumin
- 1/4 tsp seasoned salt

Cracker Barrel Chicken n' Dumplins

In a bowl, combine the flour, baking powder and salt
- 2 cups flour
- 1/2 tsp baking powder
- 1 pinch salt
- 2 tbs butter
- 1 cup buttermilk, A Bit less than a full cup (you can use regular milk if needed)
- 2 quarts chicken broth
- 3 cups cooked chicken
Rancher's Pork Chops

Preheat oven to 350 degrees
- 3 lean pork chops
- 1 small onion, sliced
- 2 green pepper rings
- 2 tbsp. catsup
- 2 tbsp. chili sauce
- 2 tbsp. brown sugar
- 1/4 tsp. Worcestershire sauce

Heat oven to 375 degrees. Brown meat; drain
- 1 lb ground beef
- 1/2 chopped onion
- 1 6 oz. can tomato paste
- 1 1/2 cup water
- 1 garlic clove, minced
- 2 tsp salt
- 3/4 tsp. oregano
- 1/4 tsp pepper
- 8 oz. pkg. lasagna noodles, cooked and drained
- 1 lb. Ricotta or cottage cheese
- 12 oz. shredded mozzarella slices
- 1/2 c parmesan cheese
COCONUT-OATMEAL COOKIES

- 1 CUP PLUS 2 TBSP FLOUR
- 1/2 TSP BAKING SODA
- 1 CUP BROWN SUGAR

- 1 CUP QUICK OR OLD-FASHIONED ROLLED OATS
- 1 TSP BAKING POWDER
- 1/2 CUP SOFTENED BUTTER
- 1 TSP VANILLA
