- 1 stick Margarine
- 1/2 Cup Peanut Butter

Black-Eyed Pea Cakes with Adobo Cream

Serve with rice dusted with salt-free Creole seasoning and a simple tomato salad dressed with vinaigrette
- 1/4 cup fat-free sour cream
- 1 teaspoon adobo sauce
- 1 (15.8-ounce) can no-salt-added black-eyed peas, rinsed and drained
- 1/4 cup dry breadcrumbs
- 1 tablespoon finely chopped onion
- 1/2 teaspoon bottled minced garlic
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg, lightly beaten
- 1 large egg white, lightly beaten

Roasted Green Beans with Mushrooms, Balsamic, and Parmesan

Preheat oven to 450F/230C
- 8 oz. mushrooms, sliced in 1/2 inch slices (I used brown crimini mushrooms, but any mushrooms will work)
- 1 lb. fresh green beans, preferably thin French style beans
- 1 1/2 T olive oil
- 1 T balsamic vinegar
- salt and fresh ground black pepper to taste
- 2 T finely grated parmesan cheese
My Tuscan Potato Soup

This is a combination of 3 spicy sausage soups I found on this website
- 3 medium potatoes, cubed
- 1 cup onion, diced
- 3 cloves of garlic, minced
- 1 stalk of celery, diced
- 1 carrot, peeled and finely diced
- 1-2 cups Kale, cut small and tough stems removed
- 1 pound Spicy Italian sausage
- 2 pints chicken stock
- 4-5 cups water
- 1/2 tsp thyme
- 1/2-1 tsp cilantro
- 1-1 1/2 cups skim milk
Insalata Pizzas

- 4 (7-inch) pitas
- 2 teaspoons bottled minced garlic
- 1 cup (4 ounces) preshredded part-skim Mozzarella cheese
- 1/2 cup thinly sliced Vidalia or other sweet onion
- 1 tablespoon cider vinegar
- 2 teaspoons extravirgin olive oil
