Ingredients

    Spaghetti Squash

  • 2

    Tablespoon Garlic Olive Oil

  • 8

    oz Pesto Sauce

  • 1

    Onion, thinly sliced

  • 4

    cloves of Garlic, minced

  • Pepper to taste

  • Parmesan Cheese to taste (optional, but yummy)

Directions

Preheat oven to 375 degrees. Cut the spaghetti squash in half and remove seeds and membranes. Place squash into a deep baking dish and add enough water to just cover the bottom of pan. Cover pan with a lid or aluminum foil. Bake at 375 degrees for 45 to 60 minutes until the skin gives easily under pressure and the inside is soft and tender. Use a fork to pull out the spaghetti-like strands from the inside of the squash. In a deep pan, add oil and bring to medium heat. Add diced onions and garlic and cook until soft and wilted. Toss the Spaghetti Squash with the roasted onions and garlic and add the pesto sauce. Sprinkle with parmesan cheese and Done!
