Banana Oatmeal Muffins

Combine all the dry ingredients together, (no need to sift), then add the eggs, mashed banana, oil and nuts
- 2/3 cup brown sugar, you could reduce the sugar to 1/2 cup if you prefer
- 1 cup rolled oats or oatmeal, processed to make fine crumbs
- 3/4 cup whole wheat
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2 eggs
- 1 cup mashed bananas, usually 3 bananas
- 1/4 cup olive oil
- 1/2 cup chopped walnuts
Beef Jerky Recipe #2

Combine and coat meat with mixture
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 1 tbsp. brown sugar
- 2 tbsp. soy sauce
- 1 clove garlic, crushed
- 1 tbsp. worcestershire sauce
- 1 lb. extra lean beef, sliced thin (can use turkey, pork or any other lean meats that you prefer)
- 1/2 tsp. liquid woodsmoke flavoring
- 4 drips tabasco sauce
Peanut Butter Krispy Bites

Butter 13" x 9" pan. Melt butter in large saucepan, over low heat
- 1/4 cup (1/2 stick) margarine or butter
- 40 large marshmallows or 4 cups miniature marshmallows
- 1/2 cup creamy peanut butter
- 5 cups crisp rice cereal

Ham, Cheese and Macaroni Salad

Cook pasta according to package directions
- 1 cup packaged dried wagon wheel or elbow macaroni
- 1/2 cups cubed fully cooked ham (8 oz)
- 4 oz. monterey jack or cheddar cheese, cut into cubes (1 cup)
- 1 cup frozen peas
- 1 stalk celery, thinly sliced (1/2 cup)
- 1/4 cup finely chopped onion
- 2 tbsp. diced pimento
- 1/2 cup mayonnaise or salad dressing
- 1/4 cup sweet pickle relish or chopped sweet pickles
- 1 to 2 tbsp. milk (optional)
- dash of pepper
- 8 cherry tomatoes, halved
- fresh parsley sprig (optional)
Fried Chicken

Place chicken pieces into a plastic container and cover with buttermilk
- 1 broiler/fryer chicken, cut into 8 pieces
- 2 cups low-fat buttermilk
- 2 tbsp. kosher salt
- 2 tbsp. Hungarian paprika
- 2 tsp. garlic powder
- 1 tsp. cayenne pepper
- flour, for dredging
- vegetable shortening, for frying
Honey Baked Chicken Wings

Cut off tips of chicken wings
- 1 - 2 lbs. chicken wings, about 18
- 2 tbsp. vegetable oil
- salt to taste
- pepper to taste
- 1/4 cup soy sauce
- 2 tbsp. ketchup
- 1 cup honey
- 1 clove garlic, chopped

In a large bowl, combine the cucumbers, onions and parsley
- 2 medium cucumbers, thinly sliced
- 4 green onions, thinly sliced
- 2 tbsp. minced fresh parsley
- 1/4 cup sour cream
- 2 tbsp. snipped fresh dill
- 1 tbsp. cider vinegar
- 1/2 tsp. salt
- 1/4 tsp. prepared mustard
- 1/8 tsp. pepper

Apple Cinnamon Muffins with Caramel Centers

Preheat oven to 375 degrees
- 3 cups all-purpose flour
- 1 1/2 cups white sugar
- 1 tsp. salt
- 4 tsp. baking powder
- 2 tsp. ground cinnamon
- 2/3 cup vegetable oil
- 2 eggs
- 2/3 cup milk
- 3 apples - peeled, cored, and grated
- 1/2 cup white sugar
- 2/3 cup all-purpose flour
- 1/2 cup butter, cubed
- 1 1/2 tsp. ground cinnamon
- 1 bag caramel candy squares
French Onion Dip

Cook onion in butter or margarine in a medium skillet about 5 minutes or until tender; cool
- 1 1/2 cups chopped sweet onion
- 2 tbsp. butter or margarine
- 1 8 oz. carton sour cream
- 1/4 tsp. salt

- 1/8 tsp. cayenne pepper
