Italian Pork Chops and Rice

Spray skillet with cooking spray
- 4 pork chops
- 2 bell peppers, any color, diced
- 2 onions, diced
- 1 large can diced tomatoes
- 1 tbsp. oregano
- 2 tsp. basil
- 1/2 tsp. sage
- 2 cloves garlic, minced
- 1/2 tsp. seasoning salt
- 1/2 tsp. pepper
- rice, prepared according to package
Crispy Potato Wedges

Place potatoes in a large bowl; add cold water to cover
- 4 medium russet potatoes, cut into large wedges
- 1 tbsp. vegetable oil
- 1/4 tsp. freshly ground black pepper
- 1/8 tsp. salt
- 2 cloves garlic, minced
- reduced-sodium ketchup
Pizza Sauce

Mix the first six ingredients together
- 1 (6 oz.) can tomato paste
- 1 - 3 tbsp. garlic, minced
- 1 - 3 tbsp. mixed Italian herbs (oregano, basil, parsley combined)
- 1 - 2 tbsp. olive oil
- salt
- 1 1/4 cups water
- 1 pizza crust
Apple Streusel Cinnamon Swirl Cupcakes

Position a rack in the middle of the oven
- SWIRL & TOPPING:
- 1/2 cup sugar
- 2 tsp. ground cinnamon
- CUPCAKES:
- 1 cup grated peeled apple (1 large apple)
- 2 tbsp. cinnamon sugar (from above)
- 1 1/4 cups unbleached all-purpose flour
- 3/4 cups sugar
- 3/4 tsp. baking soda
- 1/4 tsp. salt
- 2 large eggs
- 1 cup canola or corm oil
- 1 tsp. vanilla extract
- 3 tbsp. unsalted butter, melted
Italian-Style Chicken and Rice

- 2 cups minute white rice, uncooked
- 1 tbsp. oil
- 4 boneless, skinless chicken brast halves
- 1 can (14.5 oz.) diced tomatoes w/basil, garlic & oregano, undrained
- 1 can (14.5 oz.) cut green beans, drained
- 1/4 tsp. salt
- 1/8 tsp. pepper
Saucy Pork Chops

Sprinkle pork chops with garlic powder, salt and pepper
- 4 bone-in pork chops
- 1 tsp. garlic powder
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 tbsp. vegetable oil
- 2 cups ketchup
- 1/2 cup packed brwon sugar
- 1 tsp. hickory seasoned liquid smoke
Irish Coffee - warm and toasty

Put the coffee in a cup. Then add the hazelnut liqueur
- 1 oz. irish cream
- 1 oz. hazelnut liqueur
- 3/4 cup coffee
- 1 1/2 oz. whipped cream
- chocolate shavings
Macaroni Picnic Salad

Prepare macaroni according to package directions; drain and rinse with cold water
- 2 cups macaroni
- 12 oz. ham, julienne sliced
- 4 oz. cheddar cheese, julienne sliced
- 1/2 cup chopped celery
- 1/3 cup chopped seeded green bell pepper
- 1/4 cup sliced green onion
- 1/4 cup pickle relish
- 2 tbsp. chopped pimientos
- 1/2 cup mayonnaise
- 1 tbsp. prepared brown mustard
- 1/4 tsp. salt
Cool Cucumber Pasta

Cook pasta according to package directions; drain and rinse in cold water
- 8 oz. uncooked penne pasta
- 1 tbsp. vegetable oil
- 2 medium cucmbers, thinly sliced
- 1 medium onion, thinly sliced
- 1 1/2 cup sugar
- 1 cup water
- 3/4 cup white vinegar
- 1 tbsp. prepared mustard
- 1 tbsp. dried parsley flakes
- 1 tsp. salt
- 1 tsp. pepper
- 1/2 tsp. garlic salt
Berry Cheesecake Pudding Salad

Pour yogurt into a large bowl and mix in pudding (it will be kind of lumpy)
- 2 small boxes instant cheesecake pudding (white chocolate pudding also works)
- 1 (32 oz.) container low fat strawberry yogurt
- 1 (16 oz.) container light cool-whip
- 16 oz. frozen mixed berries, partially thawed
- 3 large fresh bananas, sliced
- 1 lb. fresh strawberries, sliced
