Banana Oatmeal Muffins

  • 2/3 cup brown sugar, you could reduce the sugar to 1/2 cup if you prefer
  • 1 cup rolled oats or oatmeal, processed to make fine crumbs
  • 3/4 cup whole wheat
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 eggs
  • 1 cup mashed bananas, usually 3 bananas
  • 1/4 cup olive oil
  • 1/2 cup chopped walnuts


Preparation time 15mins
Cooking time 35mins


Step 1

Combine all the dry ingredients together, (no need to sift), then add the eggs, mashed banana, oil and nuts.

Mix together until just combined - do not over stir.

Spoon the mixture into a greased 12 cup muffin tray.

Bake at 350 degrees for 20 minutes or until golden brown and cooked.

**If you would like to use even less oats, you can use 1/2 cup whole wheat flour, 1 cup rolled oats or oatmeal and 1/4 cup oat bran.

**For a wheat-free muffin, leave out the whole wheat flour and process 1 1/4 cup oats to form fine crumbs, then add 1/2 cup oat bran, then continue to follow the banana oatmeal muffin recipe as usual.
