- Refried beans, 30-oz can (Have a spare 16-ounce can on hand)
- Enchilada Sauce, one 28-oz can and one 10-oz can
- Whole kernel corn, one 15-oz can (drained)
- Mushrooms, 8-oz, sliced
- Tortillas (approx. 4-5 per layer)
- 1 lb grated cheddar cheese

- 2 cups onions, chopped
- 2 cups celery, chopped
- 1/2 cup butter
- 4 cups toasted bread, finely crumbled
- 4 cups cornbread, finely crumbled
- 1 tablespoon salt
- 2 teaspoons black black pepper, freshly ground
- 1 tablespoon dried sage
- 2 teaspoons poultry seasoning
- turkey or chicken broth to taste
- 4 large eggs, beaten
Thanksgiving Leftover Casserole

Preheat oven to 350 degrees F (175 degrees C)
- 3 tablespoons butter
- 1/2 c chopped onion
- 1 stalk chopped celery
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 (12 fluid ounce) can evaporated milk
- 1 cup water
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon onion powder
- 2 tablespoons butter
- 1 cup finely crushed herb-seasoned dry bread stuffing mix
- 1 cup cooked, diced turkey meat
- 1 cup shredded Cheddar cheese
- 2 cups leftover mashed potatoes
Greens with Warm Dressing

In a large skillet, saute chopped onion in olive oil; add in chopped garlic and saute until fragrant
- 1 red onion, chopped
- 3 cloves garlic, finely chopped
- 4 tablespoons extra-virgin olive oil
- 1/3 cup white balsamic vinegar
- 2 teaspoon coconut sugar or honey
- 1 teaspoon dijon mustard
- Kosher salt and freshly ground pepper
- 1 pound spinach or other greens; tough stems removed
Tomato Soup

Melt butter in saucepan; add flour and stir until bubbly
- 2 T butter
- 1 T flour
- 2 cups whole milk or half n half
- Muir Glen Fire Roasted Tomatoes (1-can)
- 2 cloves roasted garlic (I roast myself – recipe below) or use garlic salt/powder
- 1 tsp sugar
- Salt and pepper
Dutch Oven Chicken and Rice

Preheat the oven to 425 degrees
- Chicken thighs (I used 8, but I freeze half of this)OR 4 breasts
- 2 cups water
- 1 can of crushed tomatoes (the 12 oz) or Rotel tomatoes
- 1 cup rice
- 1 onion
- 3 garlic cloves
- Olive oil (about 2 tablespoons)
- Fresh herbs (I used parsley and basil)
- Salt and pepper to taste
Pioneer Woman Corn and Cheese Chowder

Corn and cheese chowder is flavored with bacon
- 4 tablespoons (1/2 stick) butter
- 1 whole onion, chopped
- 3 slices bacon, cut into pieces
- 3 whole bell peppers, finely diced (red, yellow, orange)
- 5 ears corn, kernels sliced off
- 1/4 cup all-purpose flour
- 3 cups chicken stock or broth
- 2 cups half-and-half
- 1 heaping cup Monterey Jack, grated
- 1 heaping cup Pepper Jack, grated
- 1/3 cup green onions, sliced
Baked Oatmeal in a Mug

Add oats, flax and egg in a mug
- 1/2 cup quick cooking oats
- 1 tbsp ground flax seed
- 1 egg
- 1/3 of a banana, mashed
- 1/4 tsp cinnamon
- 1/2 of an apple, chopped
- 2 tsp honey
Lasagna Soup - Instant Pot

1.Turn the Instant Pot to Sauté and allow it to heat up
- 1 lb Italian sausage or ground beef
- 8-10 lasagna noodles broken up
- 1 Jar of Homemade pasta sauce (24 oz)
- 3 Cups water or chicken broth
- 1/2 onion chopped
- 3 cloves garlic minced
- 1 can diced tomatoes
- 1 Cup shredded parmesan cheese
- 1 Cup shredded mozzarella cheese
- 1/2 tsp Sea salt
- 1/2 tsp pepper
- 1 TBSP Italian Seasoning
- 1 TBSP olive oil
Yogurt - Instant Pot

Homemade yogurt made super easy using a pressure cooker
- 1 gallon organic whole milk (I use non-homogenized)
- 1/4 cup powdered milk
- 2 packets sweet Yogurt Starter (Y5) or 3 tablespoons yogurt with active cultures
- 1 to 2 tablespoons Vanilla, optional
- Strainer - I use 2 Euro Cuisine Yogurt Strainers for 1 gal of milk
