Chocolate Sheet Cake - Pioneer Woman

- FOR THE CAKE:
- 2 cups Flour
- 2 cups Sugar
- 1/4 teaspoon Salt
- 4 Tablespoons (heaping) Cocoa
- 2 sticks Butter
- 1 cup Boiling Water
- 1/2 cup Buttermilk
- 2 whole Beaten Eggs
- 1 teaspoon Baking Soda
- 1 teaspoon Vanilla
- FOR FROSTING:
- 1/2 cup Finely Chopped Pecans
- 1-3/4 stick Butter
- 4 Tablespoons (heaping) Cocoa
- 6 Tablespoons Milk
- 1 teaspoon Vanilla
- 1 pound (minus 1/2 Cup) Powdered Sugar
Spinach Salad with Warm Bacon Vinagirette

Place the eggs into a small saucepan, cover with water, and place over medium-high heat with the lid on
- 8 ounces baby spinach, washed and drained
- 2 large eggs
- 8 pieces thick-sliced bacon, chopped
- 3 tablespoons red wine vinegar
- 1 teaspoon sugar
- 1/2 teaspoon Dijon mustard
- Kosher salt and freshly ground black pepper
- 4 large white mushrooms, sliced
- 3 ounces red onion (1 small), very thinly sliced
Shrimp with Pesto Cream Sauce

1. Bring a large pot of salted water to a boil
- 1 pound linguine pasta
- 1/2 cup butter
- 2 cups heavy cream
- 4 cloves garlic, minced
- 1 gtsp kosher salt
- 1/2 tsp ground pepper
- 1 cup grated Parmesan Cheese
- 2/3 cup pesto
- 1 pound large shrimp, peeled and deveined
Cheddar Bacon Wedge Salad - Pioneer Woman

Directions In a medium skillet, fry the bacon slices until slightly crisp
- 4 slices thick-cut bacon
- 1 cup mayonnaise
- 1/2 cup buttermilk
- 1/2 cup sour cream
- 1 clove garlic, pressed
- 1/2 teaspoon distilled white vinegar
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/8 teaspoon cayenne pepper
- 1 head iceberg lettuce
- 1/2 cup grated sharp Cheddar or Cheddar-Jack
Kale, Mushroom and Tomato Saute with Polenta

- 1/2 pound sliced button mushrooms

- 2 tablespoons of peach or apricot preserve
- 4 small slices of Gruyere cheese
- 1 peach pealed and sliced
- butter or olive oil for coating the outside of sandwich

- 2 pounds sausage
- 3 tablespoons olive oil
- 2 large yellow onions, diced
- 2 green bell peppers, seeded and diced
- 6 cloves garlic, minced
- 1 cup white wine or stock (your choice)
- Two 28-ounce cans crushed tomatoes
- One 24-ounce jar good store-bought marinara sauce (you can use another jar if you like the sauce to be more saucy than meaty)
