Plum Cake "Tatin" - Barefoot Contessa

- 6 tablespoons (3/4 stick) unsalted butter, at room temperature, plus extra for greasing the dish
- 10 to 12 purple "prune" plums, cut in half and pitted
- 1 3/4 cups granulated sugar, divided
- 2 extra-large eggs, at room temperature
- 1/3 cup sour cream
- 1/2 teaspoon grated lemon zest
- 1/2 teaspoon pure vanilla extract
- 1 cup plus 2 tablespoons all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon kosher salt
- Confectioners' sugar
Okra Patties

Combine okra, onion, salt, pepper, water, and egg and mix well
- 1 lb (3 cups)okra, chopped fine (I use food processor)
- 1/2 cup onion, chopped fine
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup water
- 1 egg
- 1/2 cup flour
- 1 teaspoon baking powder
- 1/2 cup cornmeal

Frittata Cups - Muffin Tin

Roast Chicken with Butternut Squash

Chicken quarters roasted with golden squash and sage are nice for a chilly autumn evening
- 1 chicken (3 to 3 1/2 pounds), quartered
- 3 tablespoons olive oil
- 3/4 teaspoon salt
- 1/4 teaspoon fresh-ground black pepper
- 1 small butternut squash (about 2 1/4 pounds), peeled and cut into 1-inch cubes
- 1 teaspoon dried sage
- 3 tablespoons water
Quinoa Salad with Roasted Jalapeños

- 4 large jalapeños, seeded and roughly chopped
- 1/4 cup plus 1 teaspoon olive oil
- Salt to taste
- 1 cup quinoa, rinsed well
- 1/4 cup lime juice
- 2 green onions, thinly sliced
- 1/4 cup crumbled feta cheese
- 1/4 cup pumpkin seeds, toasted
- 1/2 cup seedless red grapes, halved
- 1/4 cup chopped cilantro
Balsamic Glazed Salmon

Preheat the oven to 450 degrees F
- 1 salmon fillet (2 pounds) cut into 6 serving pieces, or six pre-cut
- salmon fillets
- Salt and pepper
- 3 tablespoons honey
- 1/4 cup balsamic vinegar
- 2 cloves garlic, minced
- 1 tablespoon brown sugar
- 1 1/2 teaspoons sesame seeds
Zucchini Salsa

In a large bowl combine: zucchini, onions, green pepper, red pepper and the salt
- 10 cups zucchini, peeled and shredded
- 4 onions, chopped
- 2 green bell peppers, chopped
- 2 red bell peppers, chopped
- 1/4 cup pickling salt
- 1 T pickling salt
- 2 T dry mustard
- 1 T garlic powder
- 2 cups white vinegar
- 1 cup brown sugar
- 1 T crushed red pepper flakes
- 1 t nutmeg
- 1 t black pepper
- 5 cups chopped ripe tomatoes
- 2 T cornstarch
- 2 cans tomato paste
- Chopped jalapenos to taste
Pesto - Pioneer Woman
