Spaghetti Squash with Parsley Pesto

Preheat the oven to 375 degrees F
- 1 medium spaghetti squash, halved lengthwise, seeded
- 1/4 cup plus 2 teaspoons olive oil
- Salt and pepper
- 2 small heads garlic, plus 1 clove garlic, minced
- 2 ounces pecans, toasted (about 1/2 cup)
- 1/2 bunch parsley, with stems, plus 1 tablespoon parsley leaves, chopped, for garnish
- 1/4 cup grated Asiago cheese
- 1 1/2 teaspoons fresh lemon juice

- 1 Spanish onion, thinly sliced
- 10 c. chicken or vegetable stock (if you want a vegetarian soup)
- 1/4 c. white wine or vermouth
- 3/4 tsp. mace
- 3/4 tsp ground ginger
- 1/8 tsp cayenne
- salt & pepper to taste
- creme fraiche (garnish) you can use sour cream if you can't find creme fraiche
- chives, minced (garnish)
Spicy Pasta Salad with Smoked Gouda, Tomatoes, and Basil

- 3 tablespoons white sugar
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 8 Roma (plum) tomatoes, halved lengthwise
- Dressing:
- 2 shallots, halved lengthwise and peeled
- 1/2 cup balsamic vinegar
- 2 tablespoons brown sugar
- 1/2 cups olive oil
- Grilled Romaine:
- 4 romaine hearts
- 1 tablespoon olive oil
- salt and pepper to taste
