Tomato Soup

  • 2 T butter
  • 1 T flour
  • 2 cups whole milk or half n half
  • Muir Glen Fire Roasted Tomatoes (1-can)
  • 2 cloves roasted garlic (I roast myself – recipe below) or use garlic salt/powder
  • 1 tsp sugar
  • Salt and pepper



Step 1

Melt butter in saucepan; add flour and stir until bubbly. Add milk and stir until almost boiling. Heat tomatoes (microwave). Add tomatoes and roasted garlic to saucepan and heat thoroughly. With an immersion blender or regular blender, puree but leave a bit chunky.

Add sugar, salt and pepper to taste.

Easy Roasted Garlic:
Preheat oven 375
Spice World peeled whole garlic cloves – from Sam’s
Make a “cup” from aluminum foil – put as many cloves as you’d like
Sprinkle favorite spices (I like Tony Chacherie’s Cajun Spice)
Tightly close foil
Put in baking dish and bake for 45 minutes.
Can mash and use as a spread on crackers, seasoning in soups and other recipes!
