Penne Alla Vecchio Bettola - Barefoot Contessa

Preheat oven to 375 degrees F
- 1/4 cup good olive oil
- 1 medium Spanish onion, chopped
- 3 cloves of garlic, diced
- 1/2 teaspoon crushed red pepper flakes
- 1 1/2 teaspoons dried oregano
- 1 cup vodka
- 2 (28-ounce) cans peeled plum tomatoes
- Kosher salt
- Freshly ground black pepper
- 3/4 pound penne pasta
- 4 tablespoons fresh oregano
- 3/4 to 1 cup heavy cream
- Grated Fresh Parmesan cheese
Potato and Zucchini Bake

Preheat the oven to 400F. Finely dice the onion
- 1 tablespoon olive oil
- 1 medium yellow onion
- 3 cloves garlic, minced
- 1 medium zucchini sliced into thin rounds
- 1 medium yellow squash sliced into thin rounds
- 1 medium Yukon Gold potato rinsed and sliced into thin rounds
- 1 medium tomato sliced into thin rounds
- 1 teaspoon fresh thyme, minced
- 1 teaspoon chopped fresh rosemary
- salt and pepper to taste
- 1 cup shredded Italian cheese
Chicken Quesadillas - Pioneer Woman

- Pico de Gallo:
- 2 tablespoons olive oil
- 2 pounds skinless chicken breasts
- Salt and pepper
- 2 tablespoons taco or Cajun seasoning mix
- 1 large onion, cut in half and then into slices
- 1 green bell pepper, seeded and sliced into strips
- 1 red bell pepper, seeded and sliced into strips
- 1 yellow bell pepper
- 12 tablespoons butter, for frying
- 12 large flour tortillas
- 2 1/2 cups grated cheese ( Monterey Jack is the best)
- 12 Roma tomatoes (slightly under ripe is fine)
- 3 yellow or red onions
- 2 cups fresh cilantro leaves
- 2 to 3 jalapenos
- 1 lime
- Salt
Southern Style Turnip Greens

- 8 cups turnip greens, torn
- 1 large turnip, peeled and diced
- 1 tablespoon salt
- 2 tablespoons butter
- Salt and Pepper
- 1 teaspoon crushed red pepper
Chicken and Rice Pot Pie

Preheat oven to 375°F. In a large bowl mix rice, vegetables, pepper, salt, soup, water, milk and chicken
- 1-1/4 c. UNCLE BEN'S® ORIGINALCONVERTED® Brand Rice
- 3-1/2 c. frozen carrot, peas, corn blend
- 1 tsp. black pepper
- 1 tsp salt
- 2 cans (15 oz.) cream of chicken condensed soup
- 2-1/2 c. water
- 1 c. whole milk (or half n half, or cream)
- 1 c. chicken diced
- 1 1/2 sheets commercially prepared puff pastry dough (I use Pepperidge Farm in the freezer section)
Fairlife Milk Yogurt - Instant Pot

Because Fairlife milk is ultra-pastuerized, there is no need for the traditional "boil" stage for making yogurt
- 1 carton (52 oz) of Fairlife milk (whole, 2%, or skim)
- 1 Tablespoon of FRESH, plain yogurt (with live cultures)
- 1 pkg sugar free instant pudding - I use cheesecake flavor. (Walmart brand)
Pot Roast Pioneer Woman

First and foremost, choose a nicely marbled piece of meat
- 1 whole (4 To 5 Pounds) Chuck Roast
- 2 Tablespoons Olive Oil
- 2 whole Onions
- 6 whole Carrots (Up To 8 Carrots)
- Salt To Taste
- Pepper To Taste
- 1 cup Red Wine (optional, You Can Use Beef Broth Instead)
- 2 cups To 3 Cups Beef Stock
- 3 sprigs Fresh Thyme, or more to taste
- 3 sprigs Fresh Rosemary, or more to taste
Strawberry Cheesecake Protein Shake

- 1/3 cup strawberry fat free greek yogurt
- 1/2 cup (about 2 large) frozen strawberries
- 1/3 cup fat free cottage cheese
- 1 scoop Vanilla Protein Powder
- 2 T fat free sour cream
- 1/2 cup almond milk

Einkorn Thin Pizza Crust

- 2 1/2 cups all-purpose einkorn flour, plus extra for sprinkling
- 2 T olive oil
- 2 teaspoons sea salt
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1/4 cup plain kefir
- 1/4 cup warm water (105-110)
- May need another 1/4 cup warm water
Pasta Sauce - Can it yourself!

Preheat the oven to 400 degrees peel away the dry outer layer of the garlic bulbs
- 6 bulbs of garlic
- 3 T olive oil
- 4 medium red, yellow and/or green bell peppers, halved and seeded
- 12 lbs peeled tomatoes
- 3 T. packed brown sugar
- 2 T. kosher salt
- 1 T. balsamic vinegar
- 1 t. ground pepper
- 2 cups snipped basil leaves
- 1 cup assorted fresh oregano, thyme, or flat leave parsley
- 6 T. bottled lemon juice
