One Pot Pasta

In a large, stainless steel Dutch oven or stock pot combine: 12 oz
- 12 oz. linguini (I used whole grain Ronzoni)
- 12 oz. cherry tomatoes, quartered
- 1 medium yellow or white onion, peeled, quartered and sliced thin
- 6 large garlic cloves, peeled and sliced thin
- 1 teaspoon red pepper flakes
- a handful of fresh basil, stems removed
- 3 Tablespoons extra virgin olive oil
- 4 and 1/2 cups low sodium chicken broth
Green Tomato Bread

Blend sugar and oil. Add eggs and vanilla (mix well), then tomatoes (mix well)
- 2 cups sugar
- 1 cup oil
- 3 eggs
- 2 cups ground green tomatoes
- 3 teaspoons cinnamon
- 3 teaspoons vanilla
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 1/2 cups chopped nuts
Corn Pasta Casserole

This is AWESOME!!!! My girlfriend brought this dish for Thanksgiving and we all LOVED IT!! So I wanted to share
- 1/2 cup butter
- 1 cup uncooked small shell pasta
- 1 3/4 cups shredded Velveeta cheese
- 1 (15 ounce) can whole kernel corn
- 1 (15 ounce) can cream-style corn
- 1/4 cup diced onion (optional)
Pumpkin Pie Cake

Beat eggs and milk together; add pumpkin, sugar and cinnamon
- 1 (18 oz) can pumpkin (not pie filling)
- 1 box yellow cake mix (2 layer size)
- 1 cup sugar
- 1/2 cup melted butter
- 1 (13 oz) can evaporated milk (not sweetened condensed)
- 3/4 cups chopped pecans or walnuts
- 3 eggs
- 3 teaspoon cinnamon
Skillet Lasagna

Add olive oil to large skillet
- 2 tablespoons of olive oil
- 1 pound of Italian Sausage, Italian Turkey Sausage or Lean Ground Beef
- 1/2 a medium onion, diced
- 2 cloves of garlic, minced
- 28 oz can of whole peeled tomatoes, crushed tomatoes or diced tomatoes
- 1 8 oz can of tomato sauce
- 1 1/2 cups of low sodium chicken broth
- 2 9 oz packages of Buitoni four cheese ravioli, from the refrigerated section
- 8 oz of fresh mozzarella cheese, cubed
- 1/2 cup of freshly grated parmesan cheese
- Flat leaf parsley for garnish
Blueberry Cobbler

This cobbler recipe uses pie crust;delicious with vanilla ice cream!
- 5 cups blueberries
- 1 1/2 c sugar
- 1 T cornstarch
- 1/8 cup cold water
- Prepared pie crust for top and bottom; I use Pillsbury refrigerated crusts.
Lime Pickles

Makes 7 quarts
- Brine:
- 7 lbs. sliced pickling cucumbers; washed and blossom end removed
- (about 40 3-4 inches)
- 2 cups hydrated lime
- 2 qts. apple cider vinegar
- 8 cups sugar
- 1 tsp. whole cloves
- 1 tsp. celery seed
- 1 T mixed pickling spices
- 1 T canning salt
- 7 drops green food coloring (optional)
Penne a la Betsy - Pioneer Woman

Cook the penne pasta until tender-firm, also known as al dente
- 3/4 - 1 pound Penne Pasta
- 1 pound Shrimp
- 3 Tablespoons Butter
- 3 Tablespoons Olive Oil
- 1 whole Onion (small)
- 2 cloves Garlic
- 1/2 cups White Wine (or To Taste)
- 1 can Tomato Sauce (8 Oz)
- 1 cup Heavy Cream
- Fresh Parsley (to Taste)
- Fresh Basil - To Taste
- Salt To Taste
- Pepper To Taste
Cherry Tomatoes - Frozen then Roasted

Toss tomatoes in a freezer bag and put in freezer
- Cherry tomatoes
- Basil
- Olive oil
- Salt and pepper
Chicken and Rice Casserole, Bacon too.

Line casserole dish with bacon
- 1 chicken cut up (or use 4 –6 boneless, skinless chicken breasts)
- 2 cans cream of chicken soup
- 1 can water
- 1 1/2 cups rice (uncooked reg. Long grain rice)
- seasonings (salt and pepper to taste)
- bacon
