Southwest Chicken - Instant Pot

Use a "pot in pot" and cover with foil
- 2 chicken breasts, thawed
- 1-12 oz pkg of frozen corn (I used a roasted corn blend with bell peppers,
- onions, and black beans)
- 1 cup jarred salsa
- 1 T taco seasoning
- 4 sweet pickled jalapeno slices (use less or none if you don't like spicy)
- 2-4 oz sour cream
Roasted Tomato Soup

Preheat the oven to 400 degrees
- 3 c. cherry tomatoes
- 1 T. olive oil
- 1 t. salt
- 1/2 t. black pepper
- 1 T. butter
- 4 garlic cloves, minced
- 1 medium onion, chopped
- 2 (15 oz.) cans of diced tomatoes
- 4 c. vegetable broth
- 1/2 t. thyme
- 1/2 t. rosemary
- 1 c. fat free half and half

Dough, sauce, cheese pizza w/tomato basil; pepperoni pizza
- Pizza Dough:
- 1 teaspoon active dry yeast
- 4 cups all-purpose flour
- 1 teaspoon kosher salt
- 1/3 cup olive oil, plus more for oiling bowl
- cup store-bought or homemade pizza sauce, recipe follows:
- 12 ounces fresh mozzarella, sliced thin
- 1 cup pepperoni pieces
- Cheese Pizza:
- 2 tablespoons olive oil
- Salt and pepper
- One 3.5-ounce jar pesto
- 12 ounces fresh mozzarella, sliced thin
- 4 ounces fontina, grated
- 4 ounces goat cheese, crumbled
- 1/4 cup grated Pecorino Romano
- Tomato Basil Salad:
- 1/4 cup olive oil
- 5 cloves garlic, finely minced
- 1 pint red grape tomatoes, halved lengthwise
- 1 pint yellow grape tomatoes, halved lengthwise
- 1 tablespoon balsamic vinegar
- 16 fresh basil leaves, chiffonade, plus more if needed

Sesame Noodles - Instant Pot

- 1 1/4 cups water
- 1/3 cup soy sauce
- 3 tsp maple syrup
- 1/4 cup rice vinegar
- A few shakes of ground ginger
- 3 cloves of minced garlic
- 2 tbsp sesame seed oil
- Red pepper flakes to taste
- 1/2 box dry spaghetti noodles, broken into thirds
- Sesame seeds (optional)
- Green onions (optional)
Cajun Pork Roast

Brown pork roast (all sides) in a black iron skillet (w/1 tsp of sugar in 2 Tblsp
- 3-4 lb pork roast
- 2 large bell peppers, chopped
- 1 large onion, chopped
- 2 cloves garlic, minced
- Cajun seasoning to taste
Balsamic Pork Roast - Slow Cooker

Season the pork with salt, garlic powder and red pepper flakes and place it into the slow cooker
- 2 pound boneless pork shoulder roast (sirloin roast)
- kosher salt, to taste
- 1/2 tsp garlic powder
- 1/2 teaspoon red pepper flakes
- 1/3 cup chicken or vegetable broth
- 1/3 cup balsamic vinegar
- 1 tablespoon Worcestershire sauce
- 1 tablespoon honey
Oven Fried Potatoes - Pioneer Woman

Preheat the oven to 425 degrees F
- 1 bag (5 Pounds) Red Potatoes, Cut Into Chunks
- 4 cloves Garlic, Minced
- 1 whole Onion, Peeled And Roughly Chopped
- 2 whole Green Bell Pepper, Seeded And Roughly Chopped
- 2 whole Red Bell Pepper, Seeded And Roughly Chopped
- 1/4 cups Olive Oil
- 1/2 sticks Butter, Melted
- 1 teaspoon Seasoned Salt
- 1/2 teaspoons Cayenne Pepper
- Kosher Salt And Freshly Ground Black Pepper
Southern Fried Cabbage

In large skillet, (I use cast iron) fry the bacon until crispy, remove to a paper towel to drain Place chopped cab
- 5-6 strips of bacon
- 1 head cabbage, sliced
- 1 onion, diced
- 1/4 cup chicken broth (I use low sodium broth)
- 1 tsp vinegar (optional)
- 1/2 tsp salt
- 1/4 tsp pepper
Peach Dumplings - Stone Gables

- 8 large very ripe peaches
- 4 TBS butter
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 2 boxes puffed pastry sheets
- 1/4 cup heavy cream
- sanding sugar
