Green Tomato Bread

  • 2 cups sugar
  • 1 cup oil
  • 3 eggs
  • 2 cups ground green tomatoes
  • 3 teaspoons cinnamon
  • 3 teaspoons vanilla
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 1/2 cups chopped nuts



Step 1

Blend sugar and oil. Add eggs and vanilla (mix well), then tomatoes (mix well). Add dry ingredients and mix. Stir in nuts. Pour into greased and floured (or non-stick spray)loaf pans. Bake at 325 for 1 hour or until toothpick comes out clean.

When pans have cooled a bit, remove and cool on cooling rack.
