Old Fashioned Custard Pie

Pre-heat the oven to 350 degrees
- 1 unbaked pie shell (I use Marie Callendar's deep dish)
- 3 large eggs
- 1/2 cup of sugar
- 1/2 teaspoon of salt
- 1/2 teaspoon of nutmeg
- 2-2/3 cups of milk
- 1 teaspoon pure vanilla extract
Butternut Squash Chipotle Soup

Heat enough olive oil to coat a soup pot over medium-low heat
- Olive oil
- 2 cloves garlic, minced
- 2 tsp chipotle in adobo, finely chopped
- 1 1/2 pounds butternut squash, peeled, seeded, and cut into 1-inch cubes
- 2 cups chicken stock plus more as needed
- Salt
- 1/2 cup heavy cream OR half-and-half
Puffed Pastry Pizza - Pioneer Woman

Thaw the puffed pastry on the counter for 45 minutes or in the fridge for several hours
- 1 whole Sheet Frozen Puffed Pastry
- Olive Oil For Brushing
- 1/2 cup Fresh Mozzarella, Grated
- 1 Tablespoon Butter
- 8 ounces, weight Mushrooms, Washed And Sliced
- 2 cloves Garlic, Minced
- 1/4 cup White Whine
- Salt And Pepper, to taste
- 8 whole Yellow And/or Red Grape Tomatoes, Halved
- 1/4 cup Goat Cheese (chevre)
- 12 whole Basil Leaves (chiffonade)
Chicken Bacon Ranch Panini - Pioneer Woman

Fry the four pieces of chicken breast in oil and butter until done in the middle, about 10-12 minutes
- 8 slices Crusty French Bread
- 4 Tablespoons Softened Butter
- 2 whole Chicken Breasts, Cut In Half From Top To Bottom
- Spicy Mustard
- Ranch Dressing (homemade Or Bottled)
- 4 slices (thick) Sharp Cheddar Cheese
- 8 slices Bacon, Cooked Until Chewy And Cut In Half
Chard with Sherry Vinegar and Walnuts

- 1/2 cup golden raisins
- 2 tablespoons sherry vinegar
- 2 bunches Swiss chard, preferably rainbow, stems removed, leaves sliced
- 1 red onion, sliced

Dill Pickles - Crunchy

Wash your cucumbers and thinly slice off the blossom end
- 8 lbs of 3-4 inch pickling cucumbers
- 2 gals water
- 1 1/4 cups canning or pickling salt
- 1 1/2 qts vinegar (5 percent)
- 1/4 cup sugar
- 2 quarts water
- 2 T whole mixed pickling spice
- whole mustard seed (2 tsp to 1 tsp per pint jar)
- fresh dill (1 1/2 heads per pint jar) or 4 1/2 T dill seed (1 1/2 tsp per

Garlic and Lemon Chicken with Sweet Potatoes and Green Beans

- 6 tablespoons olive oil
- 2 lemons, 1 thinly sliced, 1 juiced - ( 1 lemon if not a fan of lemon )
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 3/4 pound trimmed green beans or 1 qt. jar home canned green beans
- 2 medium purple sweet potatoes, 2-inch slices
- 4 chicken breasts
Hot Brown Soup

Preheat the oven to 350 degrees F
- 6 tablespoons unsalted butter, plus melted butter for brushing
- 1 small onion, diced
- 2 stalks celery, diced
- 1/2 clove garlic, minced
- 5 tablespoons all-purpose flour
- 1 quart low-sodium chicken broth
- 1 cup heavy cream
- 1 cup shredded white American cheese (about 4 ounces)
- 1 1/2 cups shredded cheddar cheese (about 6 ounces)
- 1 cup diced deli ham
- 1 cup diced leftover roast turkey
- 6 slices baguette
- 6 slices bacon
- 1/2 pint grape tomatoes, thinly sliced
- 3 tablespoons chopped fresh parsley

- 2 tablespoons olive oil
- 1 cup diced onion
- 1/4 cup diced green bell pepper
- 1/4 cup diced red bell pepper
- 3 cloves garlic, minced
- One 10-ounce can diced tomatoes and green chiles, such as Rotel
- 4 cups low-sodium chicken broth
- 4 cups hot water
- 3 tablespoons tomato paste
- Two 15-ounce cans black beans, drained
- 3 tablespoons cornmeal
- 5 small corn tortillas
