Perfect Pan-Seared Steak

Salt and pepper one side of the steak
- 1 bone-in or boneless rib eye steak or sirloin steak at least 1 1/2 pounds, cut to at least 1 1/2 inches thick
- Pinch of salt
- Freshly ground black pepper
- 2 teaspoons extra-virgin olive oil
- 3 tablespoons butter
- 2 peeled garlic cloves, left whole
- Few sprigs fresh parsley, including stems
- Optional: Wine and stock (chicken, beef, veal,etc.) and butter for deglazing the pan and making a delicious pan sauce
- Optional: Roasted potato wedges

Preheat the oven to 400 degrees F
- 12 slices thick-cut bacon, such as Nodine's applewood smoked
- 1 cup good mayonnaise
- 1/4 cup Dijon mustard
- 1/4 cup freshly grated Parmesan cheese
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 white pullman loaf or sourdough bread, sliced 1/2 inch thick (12 slices)
- 6 tablespoons salted butter, at room temperature
- 6 ounces aged Gruyere or Comte cheese
- 6 ounces extra-sharp Cheddar, such as Cabot or Shelburne Farms

1. Mix all the ingredients except the chips
- 2 cans yellow kernel corn, drained OR 1 16-oz bag frozen corn (thawed)
- 1/2 red bell pepper, sliced and chopped
- 1/2 green bell pepper, sliced and chopped
- 1/2 purple onion, chopped fine
- chopped jalapeno (optional)
- 1 small bag real bacon bits - or can cook/dice your own
- 3/4 cup mayonnaise
- 1 cup shredded cheddar cheese

Chicken and Dumplings - Pioneer Woman

For the chicken: Melt the butter in a pot over medium-high heat and add the olive oil
- Chicken:
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 whole chicken, cut into pieces (cut-up fryer)
- Salt and freshly ground black pepper
- 1/2 cup finely diced carrots
- 1/2 cup finely diced celery
- 1 medium onion, finely diced
- 1/2 teaspoon ground thyme
- 1/4 teaspoon turmeric
- 6 cups low-sodium chicken broth
- Dumplings:
- 1 1/2 cups all-purpose flour
- 1/2 cup yellow cornmeal
- 1 heaping tablespoon baking powder
- 1 teaspoon kosher salt
- 2 cups half-and-half
- 2 tablespoons all-purpose flour
- 2 tablespoons minced fresh parsley, optional

Roasted Bone Broth

A rich and delicious roasted bone broth recipe featuring turkey, chicken and beef bones
- 2 pounds beef bones (knuckle, shin, etc)
- 2 pounds turkey parts (wings, necks, leg)
- 1 pounds chicken parts (legs, wings, backs, or necks)
- 2 celery sticks, snapped in half
- 2 carrots, scrubbed, and snapped in half
- 1 large onion, peeled and cut in half
- 2 tablespoons fat of choice (such as melted coconut oil, olive oil)
- 2 bay leaves
- 1 tablespoon black peppercorns
Japanese Style Grilled Salmon

- Dressing:
- 4 (5-ounce) salmon fillets
- 1/2 teaspoon salt
- 1/4 cup soy sauce
- 1/4 cup sake or dry white wine
- 1/4 cup mirin
- 2 tablespoons sugar
- 3 tablespoons chopped green onion
- 3 tablespoons chopped fresh ginger
- 1 small lemon, thinly sliced
- Soba Noodle Salad
- 1/4 cup Dashi or defatted chicken stock
- 2 tablespoons low-sodium soy sauce
- 1/4 cup rice vinegar
- 1 tablespoon sugar
- 1 teaspoon Asian sesame oil
- Salad:
- 7 ounces dried soba noodles
- 1/2 or so cup finely julienned daikon or breakfast radishes
- 1 cup daikon radish sprouts, loosely packed
- 1 small onion, cut in half, thinly sliced, rinsed, and drained
- 2 tablespoons finely chopped green onion
- 1 tablespoon sesame seeds, toasted
- Japanese seven-spice powder, to taste (optional)
Easy Chicken Pot Pie - Paula Deen

Preheat oven to 350°. Spray a 2-quart baking pan with non stick spray
- 1 (10-3/4 oz) can condensed cream of chicken soup
- 1 cup chicken broth
- 1 3/4 cups chicken, (leftover roasted)
- 1 1/4 cups frozen mixed vegetables
- 1 1/2 cups instant biscuit mix
- 1 cup whole milk
- 1/2 stick butter, melted
- 1 pinch kosher salt, to taste
- 1 pinch black pepper, to taste

- 3 tablespoons clarified butter or EVOO
- 2 shallots, peeled and sliced thin
- 1 bunch Swiss chard, stem removed and chopped coarsely
- 4 small potatoes (about 1-pound, sliced thin)
- 1 dozen eggs
- 3 tablespoons heavy cream (not ultra pasteurized)
- Unrefined sea salt, to taste
- Black pepper, to taste
Blueberry and/or Blackberry Frozen Yogurt

Prep time: 10 mins Cook time: 15 mins Total time: 25 mins Serves: 4
- 1 cup Greek yogurt
- 1/2 cup blueberries
- 1/2 cup blackberries
- 1/2 cup sugar
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 3/4 cup milk
- 1/4 cup heavy cream
- 1/4 teaspoon vanilla extract
- Add berries, lemon zest, and sugar to a small saucepan. Cook over medium-low heat 10-15 minutes. Refrigerate mixture for 1 hour.
- Add lemon juice to the mix and whisk. Add remaining ingredients and mix until smooth.
- Churn in ice cream maker for 30 minutes.
