Breakfast Enchiladas

Lightly spray 13×9-inch (3-quart) glass baking dish with cooking spray
- 2 cups diced cooked ham or cooked sausage
- 1 bell pepper, diced
- 8 green onions, finely sliced
- 2 cups or 8 ounces shredded cheddar cheese
- 10 eight-inch flour tortillas
- 6 eggs
- 2 cups (473 ml) half-and-half
- 1 tablespoon all-purpose flour
- 1/2 teaspoon kosher salt
Edamame Fried Rice

Whisk eggs, season with salt and pepper
- 3 cups leftover cooked brown rice
- 2 eggs, scrambled
- 1 tbsp olive oil
- 1/2 onion, chopped
- 2 cloves garlic, diced
- 5 green onions, chopped
- 1/2 cup shredded carrots
- 1/3 cup ready-to-eat shelled edamame
- 3 cups raw baby spinach
- 2 tbsp low sodium soy sauce, tamari for gluten free (or more to taste)
- Chicken, cooked and chopped

Gnocchi Creamy Chicken Soup

- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 cup onion, diced
- 1 cup celery, diced
- 1 cup carrots, diced
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme
- Salt and pepper, to taste
- 1/4 cup flour
- 2 cups chicken broth
- 4 cups half and half
- 2 cups cooked chicken, shredded or cubed
- 1 pound gnocchi, prepared according to package directions
- 2 to 3 cups baby spinach, roughly chopped

- 1/4 c. canning salt
- 2 c. apple cider vinegar
- 3 c. sugar
- 2 tsp. celery seed
- 2 tsp. turmeric

- 1 cup quick-cooking grits
- 4 1/2 cups boiling water
- 1 teaspoon salt
- 10 ounces herb-and-garlic cheese, such as Boursin
