Potato Salad

Stir together potatoes, eggs, onion and celery
- Dressing:
- 5 Diced potatoes (cooked/drained)
- 3 boiled eggs (chopped)
- 2 T sweet pickle relish
- 1/2 chopped sweet onion
- 1 celery rib, finely chopped
- 1 T sugar
- 1 T vinegar
- 1/2 cup Real Mayonnaise
- Salt and pepper (or Tony C’s)
Broccoli Wild Rice Casserole

- 2 cups Uncooked Wild Rice
- 8 cups Low-sodium Chicken Broth, More If Needed For Thinning
- 3 heads Broccoli, Cut Into Small Florets
- 1 pound White Button Or Crimini Mushrooms, Finely Chopped
- 1/2 cup (1 Stick) Butter
- 1 whole Medium Onion, Finely Diced

- 1 cup good mayonnaise
- 1 cup chopped scallions, white and green parts (6 to 7 scallions)
- 1 cup chopped fresh basil leaves
- 1/4 cup freshly squeezed lemon juice (2 lemons)
- 2 teaspoons chopped garlic (2 cloves)
- 2 teaspoons anchovy paste
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 cup sour cream
- 3 heads Bibb lettuce
- 2 to 3 tomatoes
Vanilla Frozen Yogurt

- 3 cups (720g) strained yogurt (see below) or Greek-style yogurt
- 3/4 cup (150g) sugar
- 1 teaspoon vanilla extract (optional)
White Balsamic Vinaigrette

This white balsamic vinaigrette is an easy and delicious salad dressing
- 3/4 cup extra virgin olive oil
- 1/4 cup white balsamic vinegar
- 1 Tbsp honey
- 1 Tbsp lemon juice (about one generous squeeze from a fresh lemon)
- Kosher salt and freshly ground black pepper, to taste
Million Dollar Spaghetti

directions 1 1. Cook spaghetti noodles and drain
- 7 oz. pkg. thin spaghetti noodles
- 1 tsp. butter
- 1 1/2 lbs. ground beef
- salt and pepper
- 1 tsp. minced green pepper
- 8 oz. pkg. cream cheese
- 1/4 c. sour cream
- 8 oz. cottage cheese
- 1/3 c. onion
- 2 tsp. melted butter
- 8 oz. can tomato sauce
Zucchini-and-Squash Pickles

- 2 medium zucchini (about 12 oz.)
- 2 medium-size yellow squash (about 12 oz.)
- 1 red onion, halved and cut into 1/8-inch-thick slices
- 2 1/2 tablespoons kosher salt
- 1/2 cup apple cider vinegar
- 1/2 cup rice vinegar
- 3/4 cup sugar
- 1 teaspoon celery seeds
- 1 teaspoon mustard seeds
- 1/4 teaspoon dry mustard
Strawberry Jello Cake

Bake 350 about 30 minutes or a little more
- Strawberry Frosting:
- 1 pkg. white cake mix.
- 1 pkg. strawberry Jello -
- (mix Jello dry in cake mix)
- Add: (use mixer)
- 1/2 cup strawberries (pureed)
- 1/2 cup water
- 3/4 cup oil
- 4 eggs – add one at a time
- 1 tsp vanilla
- 1 stick butter, melted and cooled
- 1/2 cup strawberries
- 1 box powdered sugar
Acorn Squash - Roasted

Preheat oven to 400. Scoop out seeds and pulp from squash
- 1 acorn squash, sliced in half (will look like a star)
- 2 T butter, melted
- Sugar
- Salt
- Honey
Creamed Potatoes and Peas

- 2 lbs red potatoes, boiled
- 1/4 cup butter
- 3 Tbsp flour
- 1 1/2 tsp salt
- 1/4 tsp pepper
- 1 1/2 cups milk
- 1 cup evaporated milk
- 10 oz frozen peas
- 1/2 cup onion, diced
- 4 slices bacon, cooked and crumbled
