Apple Pie Cupcakes

Heat oven to 400°F. Lightly spray 8 regular-size muffin cups with cooking spray
- Apple Filling
- 2 tablespoons unsalted butter
- 2 large Granny Smith apples, peeled, cored,and diced into 1/4-inch cubes
- 2 tablespoons packed brown sugar
- 1/2 teaspoon ground cinnamon
- One eighth teaspoon salt
- Juice of half lemon (about 1 1/2 tablespoons)
- Topping
- 2 tablespoons unsalted butter
- 1/4 cup Gold Medal® all-purpose flour
- 1/4 cup packed brown sugar
- 1/4 cup chopped walnuts
- Base
- 1 can(12.4 oz) Pillsbury® refrigerated cinnamon rolls with icing
- Garnish
- Whipped cream (from 7-oz aerosol can)
- Caramel-flavored syrup (from 22-oz bottle)
Bacon Baked Beans

Mix all ingredients together after draining cans of beans
- 11-14 oz. can of each:

- 1 11-14 oz. can cannelini beans
- 1 11-14 oz. can baked beans
- 1 11-14 oz. can lima beans (optional)
- 1/2 lb. ground beef, browned and drained
- 1/2 C. ketchup
- 2 Tbs. mustard
- 1 C. brown sugar
- 2 Tbs. Worcestershire sauce
- Optional ingredients:
- 1 can drained pineapple
- 1/2 lb. browned and drained Italian sweet or hot sausage broken up into bits
- 1 tsp. ground black pepper
- 1 3 oz. pkg. real bacon bits

Lay each pork loin between 2 sheets of plastic wrap and pound with a kitchen mallet or rolling pin to 1/4-inch thic...
- 1 1/2 boneless single center-cut pork loin, cut into 1/2-inch thick slices
- 1 1/4 cups half-and-half, divided
- One third cup all-purpose flour
- 1/4 teaspoon white or black pepper
- 1/4 teaspoon paprika
- 2 tablespoons butter, divided
- 1/4 cup dry white wine
- 1 tablespoon lemon juice
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
Leftover Chicken and Rice Casserole

Prepare rice/vermicelli per package instructions
- 3 cups cooked chicken, shredded or cubed
- 1 family size box of chicken flavored rice/vermicelli (like Rice-a-Roni)
- 1/2 cup chopped celery
- 1 med onion, finely chopped
- 3/4 cup mayonnaise
- 1 can cream of chicken soup
- 1/2 cup slivered or blanched almonds (if you want, you can brown in small amount of butter or oil)
- 1/2 cup crushed corn flakes
Wendy's Chili in the Crockpot

In a large frying pan, brown the ground beef and then drain off any fat
- 2 lbs. ground beef
- 4 C. tomato juice
- 1 (29-oz) can tomato puree
- 1 (15-oz) can red kidney beans, drained
- 1 (15-oz) can pinto beans, drained
- 1 med. onion, chopped
- 1/2 C. celery, diced
- 1/4 C. green bell pepper, diced
- 1/4 C. chili powder
- 1 tsp. cumin
- 1 1/2 tsp. garlic powder
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. dried oregano
- 1/2 tsp. sugar
- 1/8 tsp. cayenne pepper
Easy Apple Dumplings

Preheat oven to 350F degrees Peel and core apples
- 1 Green Apple (Granny Smith, Golden Delicious)
- 1 tube (8 oz.) Crescent Rolls
- 1 stick unsalted butter, melted
- 3/4 cup sugar
- 1/2 teaspoon vanilla extract
- Ground Cinnamon (to taste)
- 1/2 cup lemon lime soda (Sprite or Mountain Dew work good)

- 1 1/2 C. buttermilk
- 1/4 C. water
- 3/4 C. bread crumbs
- 1 1/2 C. flour
- 1 tsp. baking powder

- 2 tablespoons creamy peanut butter
- 2 tablespoons rice vinegar
- 1 tablespoon vegetable oil
- 1 tablespoon honey
- 4 teaspoons soy sauce
- 1/8 teaspoon red pepper sauce
- Fresh cilantro, if desired
