Kansas City BBQ Nachos

Heat oven to 400°F. Line 12-inch pizza pan or 15x10x1-inch pan with foil; spray with cooking spray
- 6 cups triangle-shaped corn tortilla chips(8 oz)
- 2 cups shredded Cheddar cheese (8 oz)
- 1 can (16 oz) spicy chili beans, undrained
- 1 container (18 oz) refrigerated seasoned shredded pork in original BBQ sauce
- 1/4 cup Old El Paso® pickled jalapeño slices, drained, chopped (from 12-oz jar)
- 1 cup tangy vinaigrette-style deli coleslaw, drained
- 2 medium green onions, sliced (2 tablespoons)
Chicken Tortilla Cake

reheat oven to 400 degrees F
- 1/2 cup vegetable oil
- 6 (8-inch) flour tortillas
- 1 cup sour cream
- 3/4 teaspoon hot pepper sauce
- 1/2 teaspoon dry fajita seasoning
- 2-1/2 cups shredded cooked chicken
- 4 cups (16 ounces) shredded Colby-Jack cheese

- 6 scallions (green onions), chopped

Beef Quesadillas Recipe

In a large skillet, cook ground beef over medium heat until no longer pink
- 1 lb ground beef
- 1/2 cup refried beans
- 1 (4 ounce) can chopped green chilies (drained)
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 2 teaspoons chili powder
- 1/2 teaspoon salt
- 4 (8 inch) flour tortillas
- Butter (for spreading)
- 2 cups Mexican cheese blend
Louisiana Dirty Rice

Boil rice according to package directions
- 1 (12 ounce) package brown rice
- 2 bell peppers
- 2 onions
- 4 celery ribs (tops and all)
- 1/2 lb. chicken liver (optional)
- 1/8 lb. ground beef or 1/8 lb pork
- (I like to use both 1 clove garlic 4 tablespoons pecans or walnuts(optional)
- 2 tablespoons bacon drippings
- Tabasco sauce
- Worcestershire sauce
- salt
- cayenne
- black pepper
Copycat Cracker Barrel Meatloaf

Preheat oven to 350 ℉. Line a baking sheet with parchment or aluminum foil
- Topping:
- 1 1/2 lbs lean ground beef
- 3 eggs
- 1 1/2 sleeves crushed Ritz crackers
- 1/2 cup finely chopped onion
- 1/4 cup finely diced green pepper (can be omitted if you prefer)
- 4 oz shredded sharp cheddar cheese
- 1/2 cup milk
- 1 tsp salt
- 1/4 tsp pepper
- 1/2 cup ketchup
- 1/2 cup brown sugar
- 1 tsp mustard
Southern Pan Fried Cabbage

Place the bacon and vegetable oil into a large pot over medium heat
- 3 - 4 - slices bacon, chopped
- 1/4 - cup vegetable oil
- 1 - teaspoon salt, or to taste
- 1 - teaspoon ground black pepper
- 1 - head cabbage, cored and sliced or cubed
- 1 - small onion, chopped
- 1/2 - cup water
- 1 - pinch white sugar
- 2 - beef bouillon cubes crushed or granules

- 1 cup boiling water
- 1 box (4-serving size) wild strawberry-flavored gelatin
- 2/3 cup Yoplait 99% Fat Free creamy strawberry or creamy vanilla yogurt (from 2-lb container)
- 3 cups Kix cereal
- 1/4 cup butter or margarine, melted
- 1 1/2 cups sliced fresh strawberries
- 9 fresh strawberries, sliced into fans
State Fair Deep-Fried Pickles

- 4 to 5 large spicy pickles, sliced into chips
- 1 cup flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 1 cup buttermilk
- Canola oil for frying
