Cast Iron Skillet Creamed Corn

Creamed corn goes to a new level made with fresh corn, a little bacon and some heavy cream
- 6 medium ears of corn, husked
- 2 slices bacon, sliced into 1/2-inch pieces
- 1 shallot, minced
- 2 teaspoon chopped fresh thyme
- Kosher salt and freshly ground black pepper
- 1/2 cup heavy cream
- 1/2 cup homemade chicken stock
- 1 tablespoon butter
- 1 green onion, thinly sliced
- 2 teaspoons sugar (optional)
Apple Pie French Toast

- 2 granny smith apples, peeled, cored and sliced
- 2 tablespoons butter
- 2 tablespoons brown sugar
- 1 teaspoon flour
- 1/2 teaspoon cinnamon
- 1/4 cup water
- 2 eggs
- 1/4 cup milk
- 1/2 teaspoon vanilla
- 4 slices bread
- 2 tablespoons candied walnuts
Hoisin Chicken Skewers with Broccoli and Mushrooms

In a large bowl whisk the marinade ingredients
- Marinade
- 1 cup hoisin sauce
- 3/4 cup finely chopped scallions (white and light green parts only)
- 3 tablespoons peeled, minced fresh ginger
- 3 large garlic cloves, minced
- 3 tablespoons toasted sesame oil
- 2 tablespoons rice wine vinegar
- 6 boneless, skinless chicken thighs, each about 4 ounces, excess fat removed and meat cut into 1-1/2-inch pieces
- 1 pound broccoli crowns, cut into 1-inch florets
- 20 small shiitake mushrooms, stems removed
- Vegetable oil
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1-1/2 tablespoons toasted sesame seeds
