Caramelized Onion and Potato Frittata with Ham and Swiss

Preheat the oven to 350 degrees
- 2 tsp of olive oil (more if needed)
- 1 sweet yellow onion, chopped
- 5 slices of Canadian bacon or ham
- 7-8 baby fingerling potatoes
- 6 eggs
- 3 tbsp milk
- Sea salt and freshly cracked pepper, to taste
- 2-3 tbsp Swiss cheese, chopped or shredded
- 1 tbsp fresh parsley, chopped
BUTTERFINGER COOKIES

Preheat oven to 325º. Line baking sheets with parchment
- 2 1/4 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter, melted, cooled slightly
- 1 cup brown sugar
- 1/4 cup sugar
- 2 eggs
- 1 1/2 teaspoons vanilla
- 1 cup chopped Butterfinger candy bars (I used two 2.1 ounce bars)
Stuffed Mushrooms

PREHEAT broiler. Mix stuffing mix and hot water in medium bowl; cover
- 2-cups STOVE TOP Stuffing Mix for Chicken in the Canister
- 1-cup hot water
- 16-large mushrooms (about 1 lb.)
- 3-Tbsp. butter or margarine
- 1/2 - of a small green pepper, finely chopped
- 1/2 - of a small red pepper, finely chopped
- 2-Tbsp. butter or margarine, melted
Peach Pound Cake with Cream Cheese Frosting

Preheat the oven to 325ºF
- 1/2 cup unsalted butter softened
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 and 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup frozen peaches thawed, drained, and chopped. (reserve the juice)
- For the glaze
- 4 ounces cream cheese softened
- 2 cups confectioners' sugar
- 1-2 tablespoons reserved peach juice
