Southern Peach Cobbler Bread Pudding

Preheat oven to 350 degrees
- For the Topping:
- 12 cinnamon doughnuts, day old if possible
- 8 eggs, beaten
- 3 cups peaches, diced, drained
- 2 cups heavy whipping cream
- 2 cups sugar
- 1 tablespoon vanilla
- 1 tablespoon butter, room temperature
- 1 teaspoon cinnamon
- 1 cup brown sugar
- 1 stick butter, unsalted, room temperature
- 1 teaspoon cinnamon
- For the Cream Cheese Glaze:
- 8 ounces cream cheese, room temperature
- 2 cups powdered sugar
- 1 stick butter, unsalted, room temperature
- 2 tablespoons heavy cream
- 1 teaspoon vanilla
Chicken-Enchilada Skillet

Spray large nonstick skillet with cooking spray
- PAM Original No-Stick Cooking Spray
- 12 corn tortillas, torn into bite-size pieces
- 3 cups shredded cooked chicken (3 cups = about 12 oz)
- 1 can (10 oz each) Ro*Tel Original Diced Tomatoes & Green Chilies, undrained
- 1 can (10 oz each) red enchilada sauce
- 1 can (8 oz each) Hunts Tomato Sauce
- 1 cup shredded Cheddar and Monterey Jack blend cheese, divided
Turkey Meatloaf with Brown Sugar-Ketchup Glaze

Preheat the oven to 350 degrees
- 1 tsp olive oil
- 1/2 sweet yellow onion, diced
- 2 cloves of garlic, minced
- 1/4 cup of 2% milk
- 1 large egg
- 1 tsp thyme
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- One eighth tsp hot pepper sauce
- Sea salt and freshly cracked pepper, to taste
- 1 1/4 lbs 93% lean ground turkey (not all turkey breast)
- 1/2 cup + 2 1/2 tbsp fresh bread crumbs
- 2 tbsp fresh parsley, chopped
- 1/2 cup of ketchup
- 2 tbsp packed light brown sugar
- 2 tbsp cider vinegar
Country Style Casserole

In a skillet, sauce onion in 1/4 cup water until tender
- 1/2 onion, diced
- 2 (10-3/4 ounces each) cans condensed cream of chicken soup, undiluted
- 3/4 cup mayonnaise
- 1/2 cup milk
- 3 tablespoons honey
- 2 tablespoons Dijon mustard
- 4 cups cubed cooked chicken
- 1 package (26 ounces) frozen shredded hash brown potatoes
- 3 cups frozen sliced carrots
Carrot Cake Bars

Combine baking mix, sugar, oats, and melted butter in large mixing bowl and stir by hand until dough is formed
- 1 cup old fashioned or quick oats
- 2 cups brown sugar, packed (I use light or dark, whatever I have on hand)
- 4 cups all purpose baking mix
- 2 Eggs
- 2 Sticks butter or margarine, melted
- 1 teaspoon Vanilla
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon allspice
- 1+1/2 cups grated carrots
- chopped pecans 1/2 cup for batter, 1/2 cup for top
- Icing
- 8 ounces cream cheese, at room temp
- 1 stick butter or margarine, at room temp
- 3 1/2 to 4 cups confectioner's sugar

- 2 pounds lean ground beef
- 3 slices white bread, torn into small pieces
- 2 eggs
- 1/4 cup prepared yellow mustard
- 1 teaspoon salt
- 1/8 teaspoon black pepper
- 2 cups (8 ounces) shredded sharp Cheddar cheese
- 2 scallions, sliced
- 1 cup barbecue sauce, divided
Creamy Italian Pasta with Chicken

- 3 cups uncooked bow tie pasta
- 2 packages (6 ounces each) ready-to-use grilled chicken breast strips
- 1 can (14-1/2 ounces) diced tomatoes with basil, oregano and garlic, undrained
- 1 jar (15 ounces) Alfredo sauce
- 3 cups fresh baby spinach, coarsely chopped

- 1/2 cup peach apricot preserves
- 16 oz. bottle of Russian salad dressing
- 4 to 5 boneless, skinless chicken breasts

- 1 cup graham cracker crumbs
- 1/2 cup (1 stick) butter, melted
- 1/2 cup sugar
- 1 (8-ounce) package cream cheese, softened
- 1 1/2 cups powdered sugar
- 2 (8-ounce) containers frozen whipped topping, thawed
- 2 (14-ounce) cans sweetened condensed milk
- 2 egg yolks
- 1 cup lemon juice (bottled is fine)
