Banana Pudding Cheesecake

I'm using a larger graham cracker crust
- 1 premade large graham cracker crust (2 extra servings)
- 2 (8 oz.) blocks cream cheese, softened to room temperature
- 1 (3.4 oz) box banana cream instant pudding
- 2 eggs
- 1/2 cup sugar
- 2 ripe bananas, mashed
- 1/2 tbsp. fresh lemon juice
Southern Sweet Chow-Chow Relish

Add vegetables to vinegar-sugar-spice mixture and simmer another 10 minutes
- 2 quarts shredded cabbage (about one medium head). I use the same grater to shred the cabbage that I do to make slaw.
- 1/2 cup sweet onions chopped fine
- 1/2 cup chopped green or red bell peppers (optional)
- 2 Tablespoons salt
- Combine chopped vegetables and sprinkle with salt. Let stand 4 to 6 hours in the refrigerator. Drain well.
- Combine the following ingredients and simmer 10 minutes. Use a pot large enough to put the vegetable mix in later.
- 2 cups vinegar
- 1 1/2 cups sugar
- 2 teaspoons dry mustard
- 1 teaspoon turmeric
- 1/2 teaspoon ground ginger
- 2 teaspoons celery seeds
- 2 teaspoons mustard seed
Lazy Slow Cooker Lemon Chicken

Dredge the chicken in flour mixed with salt
- 1 chicken, cut up
- 1 teaspoon balsamic vinegar
- 1/2 cup flour
- 1 teaspoon salt
- 3 tablespoons ketchup
- 6 ounces frozen lemonade
- 2 tablespoons cornstarch mixed with 1/4 cup water
- 3 tablespoons brown sugar
Divine Bacon-Tomato-Gruyere Omelet Recipe

After the butter is good and hot in the pan, scatter in the bacon
- 2 tsp. clarified butter
- 1 oz. (1-1/2 slices) of cooked bacon cut into 1/2-inch pieces
- 3 eggs
- 1 oz. (1/4 C.) grated Gruyere cheese (don't pack it down!)
- 1 oz. (1/2 of a small) plum tomato, seeded and cut into 1/4-inch cubes
Leftover Taco Casserole

Cook hamburger meat; drain and add to the leftover taco meat
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 can diced stewed tomatoes
- 1 lb. ground beef
- 1 lb. taco meat
- 16 oz. cheddar cheese
- 1 C. tortilla chips, crushed and broken
Baconage Casserole

Brown the meat in a large skillet (I used a 10" cast iron skillet)
- 4 small to medium potatoes (baked, cooled, and cut into chunks)
- 1/2 lb Link 41 baconage (or substitute sausage, chopped bacon or ham,
- or combination of finely chopped bacon & ham)
- 1 small onion
- 1 cup shredded cheese (any variety (I used buttermilk cheese))
- 1 cup milk
- 5 large eggs
- salt & pepper to taste
Creamy Chicken Casserole

Heat oven to 400° F. Melt 4 tablespoons of the butter in a large saucepan over medium heat
- 6 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 4 cups milk
- 1 cup sour cream
- 12 ounces egg noodles - about 3/4 of regular bag
- 1 1/2 cups fresh bread crumbs - 4 to 5 slices
- 2 - 3 cups shredded cooked chicken or rotisserie chicken
- salt & black pepper
- 2 teaspoons dried thyme
- 1/2 teaspoon onion powder
Black-Eyed Pea and Ham Dip

Coat a large nonstick skillet with cooking spray, and place over medium-high heat until hot
- 1/2 cup diced country ham
- 2 (15.8-ounce) cans black-eyed peas, rinsed and drained
- 3/4 cup water
- 1 large tomato, finely chopped
- 2 scallions, sliced
- 1 celery stalk, finely chopped
- 1/4 cup chopped fresh parsley or 3 teaspoons dried parsley
- 2 tablespoons olive oil
- 1 to 2 tablespoons apple cider vinegar
- Cornbread crackers or round buttery crackers
Orange Cream Cake

Preheat oven to 350 degrees
- 1 box lemon cake mix
- 1 envelope orange Kool-Aid
- 3 eggs
- 1 cup water
- 1/3 cup vegetable oil
- 1 - 3 oz package orange gelatin
- 1 cup boiling water
- 1 cup cold water
- 1/2 cup cold milk
- 1 teaspoon vanilla
- 1 - 3.4 oz package instant vanilla pudding
- 8 oz tub Cool Whip
Thai Guacamole

Cut up avocados. Add lime juice, jalapeño, ginger, lemongrass, garlic and spices to bowl
- 4 ripe avocados, peeled and pitted
- 1 lime, juice
- 1 jalapeño pepper, minced and seeds removed
- 1 teaspoon minced ginger
- 1 teaspoon chopped lemongrass
- 2 cloves garlic, minced
- 1 cup cilantro, roughly chopped
- spices to taste: coriander, curry powder, salt
