- 1-teaspoon orange-flavored liqueur or 1/4 teaspoon orange extract
- 2 -Eggs
- 3-tablespoons whipping (heavy) cream
- 2-drops orange food color (or 2 drops yellow and 1 drop red food color)
- 1 1/2-teaspoons Butter
- 1/2-cup white vanilla baking chips
Potato, Mushroom, and Chicken Hash

Put the potatoes in a medium saucepan of salted water
- 2 pounds boiling potatoes, peeled and cut into 3/4-inch pieces
- 4 tablespoons cooking oil
- 1 onion, chopped
- 2 cloves garlic, chopped
- 1/2 pound mushrooms, cut into 1/2-inch pieces
- One and One Third pounds boneless, skinless chicken breasts (about 4), cut into 1/2-inch pieces
- 1 teaspoon salt
- 1/4 teaspoon fresh-ground black pepper
- 1/2 teaspoon dried thyme
- 1/4 cup heavy cream
- 2 tablespoons chopped fresh parsley

Melt the butter in a large pot over medium heat
- 3 tablespoons butter
- 1 teaspoon minced garlic
- 1 medium onion, finely chopped
- 2 tablespoons all-purpose flour
- Three 14-ounce cans chicken broth
- 4 cups half-and-half
- One 10.75-ounce can cream of chicken soup
- 1 cup prepared salsa, mild or spicy
- 4 boneless, skinless chicken breasts, boiled, drained and shredded
- One 15-ounce can black beans, drained
- One 15-ounce can kidney beans, drained
- One 15-ounce can whole kernel corn, drained
- 2 teaspoon ground cumin
- One 1.27-ounce packet fajita seasoning
- One 16-ounce bag tortilla chips
- 8 ounces Monterey Jack, grated
- 8 ounces sharp Cheddar, grated
- 1/2 cup sour cream
Greek Stuffed Meatballs

MEAT BALLS: Preheat oven to 350 degrees F
- GREEK TOMATO SAUCE:
- 2 eggs
- 1 cup seasoned fine dry bread crumbs
- 1/4 cup finely chopped pimiento-stuffed green olives
- 1/4 cup finely chopped black olives
- 1/4 cup chopped flat-leaf (Italian) parsley
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper

- 1 pound ground lamb
- 6 ounces kasseri or feta cheese, cut into 1/2-inch cubes
- 1 recipe Greek Tomato Sauce
- 1/2 cup of chopped onion (1 medium)
- 1 clove of garlic, minced
- 1 tablespoon of olive oil
- 1 ounce of tomato sauce
- 1/4 cup of dry red wine or beef broth
- 1 teaspoon of dried oregano, crushed
- 1/2 teaspoon of ground cinnamon

Cut off and discard tips of chicken wings
- 12 chicken wings (about 2 1/2 pounds total)
- 1 cup Coca-Cola
- 1/4 cup reduced-sodium soy sauce
- 2 tablespoons dry sherry or dry white wine
- 3 thin slices peeled fresh ginger
- 2 cloves garlic, thinly sliced
- 1/4 teaspoon crushed red pepper
- 2 tablespoons vegetable oil
- 1 tablespoon sesame seeds, toasted
